Georgian salad: several recipes

At the words "Georgian salad" a Russian person has associations with a huge amount of spicy greens, fresh vegetables, various sauces with nuts and pomegranate seeds, and also with cheese "Suluguni" or "Adyghe" and olives. But no one will give you a clear one-time recipe. And this is correct, because there are a lot of salads in Georgia. And they all have an amazing taste and a huge range of vitamins.

Below are a few recipes, which are especially famous for Georgian cuisine. Salads can be purely vegetarian, as well as meat. Each recipe can be served with your favorite sauce - authentic, Caucasian, and your favorite. So, let's begin.

№ 1. Georgian salad for shish kebab

Two sweet peppers (ideally red and yellow) are cleaned from seeds and cut together with two tomatoes and two cucumbers into slices. One hundred or slightly more grams of Suluguni cheese is cut into cubes. Salad leaves need to be washed and torn by hand. In a deep bowl we put leaves and vegetables, throw black olives without pits (entirely) and finely chopped herbs: basil, coriander, dill. The number of the last ingredients is chosen based on your own preferences. We fill the dish with olive oil with a few sprays of balsamic vinegar. Excellent washing with "Khvanchkara."

№ 2. Georgian salad with nut dressing

Three cucumbers and onions cut into circles, and three tomatoes - large slices. We put it in a bowl. Blue basil and mint with any other greens to your taste by hand, crumble over the vegetables. In the blender, grind 40-50 g of walnut kernels, incomplete teaspoon of salt, red pepper on the tip of the knife and crushed 2-3 cloves of garlic. Nut mixture put in a separate bowl, add 2 tablespoons of wine vinegar and diluted with water, so that the sauce had a consistency of liquid sour cream. 10-15 minutes before serving, mix the salad with the sauce so that all the ingredients have time to mix well.

№ 3. Georgian salad "Traditional"

Tomatoes for this dish (3 pieces) are cut into cubes. 200 grams of smoked sausage cut into strips, and 100-150 g of hard cheese tinder on a large grater. Two cloves of garlic squeezed into the total mass, mixed and let stand for about 10 minutes. After that, season with mayonnaise, mixed with fresh herbs for your taste. You can decorate such a nice dish with seeds Pomegranate and basil leaves. For lovers of spices, you can use grass of the Tarkhun along with fresh herbs. But getting it on the shelves of our food markets is problematic.

№ 4. A hearty Georgian salad with beef

Because of its caloric content, it can be served as an independent dish as a cold dinner. 400 grams of beef tenderloin should be boiled with herbs, cooled and cut into small cubes. Two carrots boil in a peel and cut into circles. 300 grams of champignons fry and chop large. Add 300 g of canned peas, 3-4 cloves extruded under the garlic press, a bunch of spicy greens. In a separate bowl we make a sauce: mix the mayonnaise with 50 g of "Tkemali", add a handful of ground walnuts, mix. Dressing the sauce with our salad. They serve it only with pita bread or bread. Beef can be replaced with smoked chicken.
