How to prepare a useful vitamin salad from cabbage and carrots with vinegar

Among such a variety cabbage salad with carrots and vinegar may seem to you very ordinary, but what other dish in the autumn or winter season can give you so many useful vitamins and fiber, while being very low-calorie, easy to prepare and affordable. And if you watch a figure or even want to get rid of a couple or three extra pounds, then this vegetable mix is just what you need. Replace them with the usual second one, or, if you can not refuse a portion of meat for lunch, then with a chop or stewed chicken, use not boiled potatoes or rice, but the salad offered above as a side dish. Thus, you will reduce the caloric content of your diet, and its utility, on the contrary, increase. It is in the cold season that it is so important to maintain excellent immunity.

Salad "cabbage with carrots": recipe with vinegar, apple and other ingredients

This dish is easy to prepare, because its ingredients are most often in the fridge of any hostess, and a pleasant crunchy taste like adults and children. Just keep in mind that under vinegar, in all proposed recipe options, either natural apple or balsamic or wine variety is meant, but in no case is it an essence. Also, you can add lemon juice to the dressing, it will turn out even more delicious. For several portions of this "vitamin bomb" you will need:

- half a kilo of white cabbage;
- 300 grams of fresh, crunchy carrots;
- for refueling: oil, olive or vegetable, about a tablespoon of apple cider vinegar and garlic to taste.

Cabbage finely chop, lightly salt and remember with your hands that it gave juice. Carrots can be grated on a large grater. Connect the vegetables to each other and pour a dressing of vinegar, lemon juice and squeezed garlic (if desired). Thoroughly mix everything and leave for a quarter of an hour to stand. Salad from cabbage and carrots with vinegar can and slightly diversify, adding there one sliced sour apple, finely chopped red pepper. It will also be good to combine with the main ingredients and fresh cucumber. A little tip: if you cook this dish as part of your diet for weight loss, then you can not add oil, refilling from lemon juice, herbs and balsamic vinegar will make the vegetables tasty and without adding fats. You can calculate how many calories in this case will contain lettuce: cabbage, carrots, vinegar in the quantities specified in the recipe contain 257 kcal in total, not 100 grams, but almost a kilogram of prepared salad (half a kilo of cabbage plus three hundred grams of carrot). "Provencal": cabbage and carrot salad with vinegar

This is a rather interesting recipe, where the vegetables we already mentioned are offered as the main ingredients. However, it will take a little more time to prepare it: first, you need to make a marinade for the dish, and secondly, let the salad brew for at least 12 hours. But why not try it? Take:

- 2 kilograms of white cabbage;
- 3 medium-sized carrots;
- for marinade - 2 glasses of water, 1 teaspoon of salt and 0.5 tsp. Sugar, and also 0.5 glasses of vegetable oil, 8 tablespoons of natural apple cider vinegar.

Cabbage finely chop, add salt and mix with hands, grate carrots on a large grater. For marinade, combine in a pan 2 cups of water, salt, sugar, oil and vinegar, put on a plate and bring to a boil. Then pour the resulting liquid into the vegetables and leave them to stand at room temperature for 12 hours. After that, our salad of cabbage and carrots with vinegar, which has a beautiful name "Provansal", should be put in a jar and put into the refrigerator, where it can be stored for 10 days. Remember that every portion of it is a whole storehouse of vitamins, so do not neglect the cold winter with these simple and affordable vegetables.
