Buckwheat with mushrooms - a versatile dish

Buckwheat with mushrooms is a versatile dish, it can be served for breakfast or dinner. In addition, it is an excellent side dish that perfectly fits any meat dishes.

Prepare a dish of buckwheat with mushrooms can be in different ways. Here is one of the simplest options. On a glass of fast-digesting buckwheat-cereals, you need to take 400 grams of fresh or freshly frozen mushrooms and three onions.

To cook such porridge is best in dishes that have a thick bottom, for example, in a saucepan or a scallop, you can use a cauliflower. Buckwheat with mushrooms can be prepared and using dry or canned mushrooms. Another option for cooking this dish is to make a dressing from onions and mushrooms (if desired, add sour cream or mayonnaise) and mix with the finished crumbly buckwheat porridge.

I must say that such a dish as buckwheat with mushrooms can be an addition or main dish on the festive table during the fast. Especially if you cook it in a serving pot.

So, to make a buckwheat dish with mushrooms in a pot, we need a glass of buckwheat, 250 grams of mushrooms (fresh or freshly frozen, if using dry mushrooms it will take about 50 grams), one or two onions, some butter, salt and seasonings.

Mushrooms are best used for forestry, but you can, of course, dispense with champignons. Mushrooms are boiled and cut into large enough pieces. When using dry mushrooms, they should be soaked before boiling. Chop the onions as small as possible. We fry onion and mushrooms in vegetable oil and combine this mass with washed raw buckwheat. Mix and lay out a lot of serving pots (although this porridge can be cooked in one large clay pot).

Now we will prepare the liquid for pouring. It is best if you have a natural mushroom broth that is left after boiling the mushrooms. But if there is no such broth, you can take a vegetable broth or simply salted boiling water. Fill the liquid in the pots so that it rises above the layer of the groats approximately two fingers. We cover the pots with lids and send them to a hot oven. We cook the porridge at a temperature of 220 degrees for 15 minutes. Then reduce the heating to 160 degrees and continue to prepare another 40 minutes. Ready buckwheat porridge served on the table, sprinkled with herbs. If you want to cook quite a holiday version, then pots instead of the lid can be covered with "caps" prepared from yeast dough.

Buckwheat porridge with mushrooms can be cooked using modern kitchen appliances, for example, multivarkers. If your device has a bowl with a volume of 4.5 liters, then take 3 measuring cups of buckwheat, 6 measuring cups of water or broth, 4 small onions, 350-400 grams of mushrooms, a teaspoon of salt (its number is better to determine to your taste) and 6 Spoons of vegetable oil.

Chop onion finely, mushrooms rather large slices. We pour oil into the bowl of the multivark, put the onion and turn the appliance into the "baking" mode, setting the time to 40 minutes. From time to time, open the lid and stir the onion with a silicone spatula or a spoon from the multivark. After 20 minutes after the onion is fried, add the mushrooms. Stir and leave the products to be fried until the end of the regime, that is, for another 20 minutes.

Now add the washed buckwheat, pour in salted water, close the lid and turn on the "buckwheat" mode. After the timer sounds, our buckwheat with mushrooms in the multivarquet is ready. You can arrange it on plates and call everyone to the table.
