Tatar cuisine has centuries-old traditions. Much has changed in it, but it has retained its identity. Over time, it was enriched with new products and knowledge, which were borrowed from neighboring peoples. But the Tatar dishes, in turn, were adopted by representatives of other nationalities. One of these dishes is aza in Tatar from beef. Let's talk about the ways of its preparation.

What is aza?

Azu is one of the traditional dishes of the Tatar cuisine, which consists of potatoes and fried meat. For cooking use a variety of varieties - it can be lamb, beef, and even a young horse.

There are many options for cooking this dish. Let's look at one of them.

What ingredients will be needed for cooking?

For aza in Tatar, we need the following products from beef:

  1. Beef - 0,5 kg.
  2. Potatoes - 6 pieces.
  3. Onion - 250 g.
  4. Pickled cucumbers - 2 pieces.
  5. Tomato juice - 0,5 glasses.
  6. Meat broth - 250 ml.
  7. Salt to taste.
  8. Black pepper powder.
  9. Vegetable oil.
  10. Garlic - 2 cloves.

Recipe for azu

This recipe is not at all complicated. For cooking it is necessary to have two frying pans (or a frying pan and a scallop).

First, we'll peel the onion and chop it very finely. In any case, do not melt it with a blender, this tends to spoil the taste of the dish! Luke should be half as much as meat. Cut it, put it in a frying pan and fry it in vegetable oil until it is clear.

In the meantime, we are preparing a tomato mixture. There are three options for its preparation. You can take tomatoes and, after pouring them with boiling water, peel off the skins, then finely chop. And you can use tomato paste, diluting it with water, or take natural juice. Pour the pasta into a frying pan and simmer the onion further.

Next, you need to prepare the meat. It can be both veal and beef. We cut meat not very long blocks, so that there were no veins.

Warm up the second frying pan, pour a little oil and lay the pieces in one layer. The meat should be slightly fried. And then connect it with the paste. Transfer it to a cauldron or a scallop. Fill it all with meat broth and simmer on low fire until ready.

Since azu is a dish with pickled cucumbers, then we will deal with them. Remember that cucumbers should only be salted, in no way marinated. Clear them from the peel and remove the large seeds. Then a little fry until the moisture evaporates.

Now the turn of potatoes has come, we cut it into cubes. Then necessarily well it is washed out under water to clean starch, and we spread on a frying pan. Fry until golden brown. This is done so that the azu does not become solid porridge, and each piece has its own form, otherwise our potatoes with meat and pickled cucumbers can turn into mashed potatoes.

And now we will connect all the prepared components together. Do not forget to add chopped garlic, ground with salt. But it is important not to overdo it, because the cucumbers were also salty. Are they making pork from pork?

In general, aze of pork with pickled cucumbers - this is not a classic recipe for Tatar cuisine. In the original it is prepared from lamb and beef. But, since we modify the recipes and adapt them to ourselves, it is quite permissible to use pork. And some prefer a chicken at all.

Products for azu from pork

For preparation we should get the following products:

  1. Pork - 0,5 kg.
  2. Potatoes - 0,5 kg.
  3. Pickled cucumbers - 3 pieces.
  4. Butter - half of the pack.
  5. Vegetable oil - 50 g.
  6. Onion - 1 piece.
  7. Tomato puree - 1 tbsp. L.
  8. Salt, pepper peas and ground.
  9. Garlic - 2 teeth.
  10. Lemon.
  11. Bay leaf.
  12. Parsley (herbs).

Recipe for azu from pork

Azu is a very tasty dish. And with pork, his taste will be more familiar to us than with lamb. It is more like stewed potatoes. But with some nuances that give novelty and some zest. Another feature of this recipe is that the products are fried in melted butter.

So, cut the meat into small pieces and fry until browned. When the crust was formed, add the onion, cut into half rings. Sprinkle with salt, pepper. And we shift all this into a cauldron, where, in fact, the aza will be extinguished.

Potatoes cut into strips and fry a little until half ready. A crust must form which will retain the shape of the pieces when extinguished.

Now we'll clean and cut the pickles and lightly fry them. Potatoes we shall salivate and pepper, we will transfer in kazan to meat. In the meantime, add the tomato puree to the cucumbers and give a little more stew. Next, fill the contents of the mixture with the resulting mixture. If the liquid was not enough, then you can add meat broth and cook until ready. Do not forget to put the bay leaves, salt and pepper to taste. You can also add a couple of slices of lemon. It gives a very pleasant smell.

At the very end, the finished dish sprinkles finely chopped garlic. And when serving on the table, sprinkle with parsley. The taste and aroma of this treat will not leave anyone indifferent.

Azu in Tatar in pots

In general, traditionally, azu with potatoes and pickled cucumbers is cooked in a cauldron at the stake. But in modern conditions mistresses will not begin to experiment like this. Therefore it is possible to use modern kitchen accessories. There is one more original recipe for making azu - in clay pots. It is believed that this way of processing products gives the best taste and aroma.

To make azu in pots, it is necessary to cut meat, onions. In the frying pan pour in the oil, ketchup, add salt with water, put the meat and put it out a little. Then put it all in the container. Top the sliced cucumbers, and then the potatoes (pre-fry it in advance). Pour the contents of the tanks to half with water or meat broth and add the mayonnaise, sprinkle with herbs. Now you can put the pot in a preheated to one hundred and eighty degrees oven and bake for an hour. The dish is ready! This cooking option is very convenient for a festive table. Each guest gets his hot and fragrant pot. It's tasty and beautiful.
