We suggest to consider three main options for cooking tomatoes. Two of them will be with the use of ready-made ketchup "Chile", which is easy to get in any more or less large grocery store, the third option - using the very chili. Choose which one you prefer.

Preserved with ketchup "Chile" tomatoes. Option one

Necessary ingredients:

  • Tomatoes - 700-800 grams;
  • Ready-made ketchup "Chile" - 250 grams;
  • One glass of sugar;
  • 150 ml of table vinegar;
  • Two or three cloves of garlic;
  • Two tablespoons of salt (with a small top);
  • A little greens of dill (you can use umbrellas);
  • Water - 1 liter.

Preparation

Garlic must be cleaned and cut into circles. Dill greens should be washed, dried with paper napkins and cut.

In the banks to lay out thoroughly washed tomatoes without flaws and pedicels, as well as prepared garlic and dill. To ensure that the fruits are not cracked by boiling water, it is recommended in each tomato to make 2-3 punctures with a toothpick or small incisions with a knife crosswise at its base.

Then we prepare marinade.

Water should be poured into a saucepan, add salt, sugar, ketchup, bring to a boil and completely dissolve the ingredients. After this, pour vinegar and re-bring to a boil.

In the prepared cans, pour the marinade. Carefully stir the jars to allow excess air to "get stuck" between the ingredients, if necessary, top up the marinade and quickly roll up the boiled hot caps.

After that, the cans should be hidden in a blanket with lids down and wait for their complete cooling (this usually occurs within a day, if the cans are liter and for two days, if the cans are three-liter). After that, they can be removed to the place of permanent storage.

Second cooking option

In this recipe, it is more convenient to use large tomatoes, since they will need to be cut.

Necessary ingredients:

  • Tomatoes;
  • Ready-made ketchup "Chile" about 300 grams;
  • 1/2 cup sugar;
  • 1/2 cup of table vinegar;
  • garlic;
  • Bay leaf;
  • Pepper fragrant peas (to taste);
  • Two tablespoons of salt;
  • A little green dill (you can use umbrellas);
  • Water - 1 liter.

Preparation

In carefully washed jars, lay a bay leaf, greens and sweet pepper on the bottom. Then fill the jar with a layer of tomatoes, previously cut into two or four pieces (depending on the original size of tomatoes), each layer is topped with spices. Continue laying layer by layer (spices, tomatoes) until the jar is full. The final layer should be from spices.

Then we prepare marinade. In a saucepan, water, sugar, salt, ketchup and vinegar are mixed. The mixture is brought to a boil and until the ingredients are completely dissolved, after which it is poured into cans. Tare roll and hide in a blanket until completely cooled. After that, the banks are taken to the cellar or to the pantry.

Variant with pepper

This method is incredibly simple, despite the fact that there is no specific recipe. Surprising, but true.

The whole secret is that you can cook tomatoes, canned with chili, simply by adding to your usual tomato recipe for the winter hot pepper.

That is, you cook on your favorite recipe, but add there ostinku to your taste. As a rule, it is enough to put a 3-4 circle about 0.5 cm wide on a liter jar if you use long pepper pods, or one miniature pepper, if you use a small variety. For those who like more sharply, the amount of pepper can be increased by two or even three times.

In all three versions of the preparation of "Chile" tomatoes, note that they should not be eaten for at least a month after cooking. Otherwise, tomatoes may not have time to thoroughly marinate.

Preserved with chili tomatoes will delight you and your loved ones with their own taste, they will also be a decoration of the festive table. This snack is recommended to be served to hot meat dishes and strong spirits, but they are often swept off the table and as a separate dish.
