Useful and hearty soup from dried mushrooms.

How nice to wander through the woods and bring home a whole basket of mushrooms. After the necessary treatment, they are often salted. But those who tried to dry them know how many dishes can be cooked with them. Mushrooms have a specific smell, taste and high nutritional value, for which they are also called "vegetable meat". The most important is their dignity - a large supply of protein. Especially it concerns dried mushrooms, from which you can cook soups, prepare toppings for pies and pancakes, and make caviar.

Soup of dried mushrooms is delicious, nutritious and very satisfying. Before cooking, they should be poured with water or milk and let them brew for about an hour. During this time the mushrooms will swell and become as fresh.
Try to cook several mushroom dishes, the recipes of which are given below. I'm sure you'll like them.

Soup from dried mushrooms

Necessary ingredients for soup: two onions, 20 dried mushrooms, a couple of spoons of butter, parsley, dill and salt.

Preparation: firstly rinse thoroughly the mushrooms, if necessary, clean and boil in salted water. Ready mushrooms are cooled and cut into thin strips. Finely chop onion, combine with mushrooms and lightly passer. In the pan, where mushrooms were cooked, add butter, put on the fire and warm up a little, but just do not bring to a boil.

In the plates we spread mushroom fry, pour hot broth and sprinkle with topped shredded greens. Soup of dried mushrooms is ready. Serve it better with sour cream.

Soup puree from dried mushrooms with chicken

We need: 50 grams of white dried mushrooms, a small chicken, two tablespoons of flour, an average carrot, two egg yolks, two tablespoons of butter, two onions, a partial glass of fatty cream, salt.

Preparation: chicken washed, cut into portions and cook for about an hour, while not forgetting to remove the scum. One bulb and carrots are cleaned, cut in half and baked in a dry frying pan, about three minutes on each side. Baked vegetables are added to the pan and cook for about half an hour.
Then we remove the pieces of chicken and filter the broth.

Pour dry mushrooms with water, leave for ten minutes and drain the water.
In a small pot, pour half a liter of water and after it boils we throw mushrooms and podsalivaem to taste. Cook for 15 minutes, after filtering. Mushrooms cut into small pieces.

Take the second bulb, clean, finely shred and lightly fry in oil. After that, add the flour and mix everything thoroughly. We add a little chicken broth and blend the whole mixture through a sieve.
In the chicken broth pour in the mushroom broth, add yolks and cream. We bring the soup from dried mushrooms to a boil and remove from the plate.
A sweet soup can be served with chicken, chopped greens and small rusks.

Caviar from dried mushrooms

We need: 100 grams of dried mushrooms, onions, carrots, garlic cloves, one egg, two tablespoons of vegetable oil, a tablespoon of olive mayonnaise, pepper and salt.

Preparation: mushrooms are put in a cup, poured with warm water and leave for an hour. Then drain the water, mushrooms are washed under running water and cut.
Onion finely shinch half rings, carrots cut into cubes and chop the garlic. Boil the hard-boiled egg. We put a frying pan and butter on the fire and fry carrots, onions and garlic. Approximately minutes through seven we spread to vegetables the chopped mushrooms and we fry some more minutes. Fried vegetables are laid in a blender, add the egg, salt and a little pepper. All we grind to a homogeneous mixture, add mayonnaise and mix thoroughly.
From mushroom eggs you can make sandwiches or use it as an independent dish. Caviar is very tasty and beautiful.
