So, to make a salad of fried eggplant, you need to buy:

  • Not very large eggplants - 2 pcs .;
  • Large cloves of garlic - 2 pcs .;
  • Pepper sweet large - 2 pcs .;
  • Vegetable oil - 6 large spoons;
  • Tomatoes large fleshy and sweet - 2 pcs .;
  • Salt, fresh herbs, paprika, pepper and other spices - to taste.

Salad from fried eggplants can be served to the table in a cooled and hot state. The first option is used as a snack, and the second as a side dish to meat or fish.

It should be noted that the resulting vegetable salad is very tasty and nutritious. If you did not use it immediately, then it can not be stored for more than five days in a refrigerator.

There are many ways of how to make a delicious snack of aubergines for the winter. In this section of the article we will consider the simplest version.

So, we need:

  • Eggplant large - 1 kg;
  • Onion - 200 g;
  • Juicy carrots - 300 g;
  • Garlic fresh - 1 head;
  • Water is clean - 250 ml;
  • White sugar - 100 g;
  • Sea salt - 1 large spoon;
  • Vegetable oil - 55 ml for marinade and the same for frying eggplant;
  • Table vinegar - 120 ml.

Preparing ingredients

Before you start making a salad of fried eggplants for the winter, you need to process all the ingredients. The main product is thoroughly washed, cut into cubes, savored with salt and left for 40 minutes. Then eggplants are rinsed, dried and fried in oil (sunflower) until a brown crust appears. After that, they cool down.

While the vegetables cool down, they begin to process the remaining components. Carrots tinder on a Korean grater, and then combine with crushed garlic and carefully crush hands until the appearance of juice. As for the onion, it is simply cut into half rings.

Forming a snack

Salad for winter from fried eggplant layers is formed quite simply. To do this, use 1 liter or 750 ml sterilized cans. First in them spread a layer of fried vegetables, and then carrots with garlic and half-rings of onions. Such layers should be about 4-5.

Preparation of marinade

Marinade for such a snack is done quite simply. In a saucepan boil the usual water, and then add white sugar, sea salt and vegetable oil to it. After three minutes, the dishes are removed from the plate and vinegar is poured.

After the salad is laid out in layers, and the marinade is fully prepared, it is poured into cans of vegetables (up to the top) and immediately rolled up with lids. By the way, the lids should also be pre-sterilized in plain water.

Hermetically closing the snack, it is left in the room until it cools. After that, the prepared winter blank is removed either to the cellar or to the basement (that is, to a dark and cool place). If there are no such premises in your house, then you can store the snack in the usual cupboard or in the refrigerator.

Present for dinner

Salad from fried eggplants with carrots and aromatic marinade is very tasty and nutritious. Due to the presence of spices and table vinegar, it has a piquant taste. To serve such a spicy snack to the table follows in a cooled form together with a hot dish and a slice of white bread.
