Ingredients:

  • Goose weighing about 3-4 kg - 1 piece;
  • Large sour apples (ideal - antonovka) - 8 pieces (4 for stuffing, 4 for baking on a baking sheet);
  • Prunes (preferably without pits) - weighing 150 grams;
  • A few liters (about 3) of apple juice;
  • Half-packs (about 100 grams) of sour cream;
  • Honey liquid in volume of 50 ml;
  • Olive oil of 50 ml;
  • 2 tablespoons of salt, a spoon of coriander, a spoon of a mixture of peppers (black, red and fragrant);
  • Potatoes for garnish - 6-8 tubers;
  • For decoration: parsley, pomegranate seeds and tomato.

Technology of preparation

The recipe for goose with apples is laborious and time-consuming. If you decide to cook this dish for a certain holiday, then it should be started for a day, as it takes a long time to marinate a goose.

1st step: marinating

Eviscerate and plucked goose carcass thoroughly rinse, dry with paper towels. If you caught a fat goose, then make a few cuts on the goose. Mix salt, coriander and different types of pepper. Rub with goose mixture both on top and inside. Rub carefully, should not remain dry pieces. Rub into the skin of the spice. If it's hard, then you can add a little vegetable oil. In order to be more convenient, you can use a large plastic bag. After rubbing the goose in it and marinate: pour apple juice, tie the edges and put in the cold for a day. During this time, turn the carcass several times, so that the juice evenly permeates the meat.

Step 2: Stuffing

After a day of marinating, get the goose out of the package. Cut it with paper towels. Apples should be cut into quarters, cut out the seeds. Rinse the prunes. Cover the large baking sheet with foil. Lay the goose on it and stuff it with apples and prunes. Fill not too tightly. Then sew up the abdomen. Smear the carcass with sour cream from all sides. If you find a suitable package size, then bake the goose in the sleeve.

3rd step: baking

In the oven, set the temperature to 200 degrees. Time will depend on the size and weight of the goose. Consider this: for every kilogram there are 45 minutes of baking. That is, the carcass of 4 kg will be roasted for 3 hours. While the goose is in the oven, prepare the garnish. With apples peel off the skin and remove the core. Peel potatoes and cut into quarters. 20 minutes before the readiness to get the goose and check whether he propekshsya. Knock the thigh area with a knife. Should go transparent juice, if red, then put the goose in the oven for another 20 minutes. So, a goose with apples, stewed in the sleeve, is almost ready. But he is not at all appetizing: pale and boiled. To give it a beautiful appearance, you need to remove the sleeve and spread the cuticle with a mixture of butter, honey and a couple of spoons of apple juice. On the sides, spread the apples and potatoes and put the goose in the oven for 20 minutes at a temperature of 220 degrees. Put the ready goose on a festive tray.
