Christmas goose. Recipes for the holiday

Christmas is a family holiday, when everyone gathers at a big table. And, of course, the main dish at the celebration is the traditional goose. The recipes for cooking this dish are different. Every nation has its own secret of Christmas treats. Dishes from the goose occupy a worthy place in the Russian cuisine. A juicy fragrant dish is most often a stuffed carcass, baked in the oven. Filling can be different: prunes, cereals, all sorts of vegetables. It is necessary to add spices. Depending on the combination of products and seasonings, the flavor and aroma of the cooked dish varies from gently-spicy to spicy.

Goose meat: caloric content and properties

Other birds, such as chickens and turkeys, are considered dietary and less caloric than goose. Recipes for their preparation are also different, since goose meat requires a longer heat treatment. Goose has the most fatty meat, therefore, dishes from it are not recommended for use in gastrointestinal diseases.

We cook goose with apples, leeks and cranberries

Food required for the dish:

- goose - 1 bird;

- apples - 1 kg;

- garlic - 1 head;

- Leek - 2-3 pieces;

- cranberries - 200-300 grams;

- cumin - 0,5 tsp;

- a mixture of ground pepper - 2 tbsp. L .;

- salt - 2 tablespoons;

- mayonnaise or sour cream - 150 grams.

Procedure:

1. Prepare the carcass. First remove the upper parts of the wings with a sharp knife. Then clean the inside of the giblets and fat, cut off the neck and excess skin around it, leaving a little to fix.

2. Then marinate the meat for a while. It is better to do this in 3-4 hours or in the evening, so that the meat can soak up with spices. Prepare the mixture: salt, minced garlic, cumin, ground pepper, mayonnaise. Lubricate abundantly inside and out. Place the goose carcass in the dishes, cover with a film, put in a cold place.

3. Prepare the filling. To do this, slice the leeks and apples, mix with cranberries, salt and ground pepper.

4. Place the filling inside the goose and fix the belly of the bird with a wooden stick or toothpicks. Just close the hole at the neck.

5. Spread over the top with a mixture of garlic, salt, pepper and mayonnaise. Bake better in a goose or deep baking tray, because during the frying process, a lot of fat will be allocated, which must be periodically taken away.

6. Place in an oven preheated to 250 degrees. After 30-45 minutes, reduce the temperature to 220. The cooking time is at least 2.5 hours. Readiness is determined in a simple way: pierce the breast with a fork, if blood juice is allocated, then the meat is not ready yet.

Several ways are preparing a Christmas goose. Recipes offer different types of baking, for example, using a special sleeve. In this case, the dish will be ready in two hours, but it will not get such a crusty crust, unlike open baking. Try to use as a filling different vegetables.
