We cover the baking tray with foil, lubricate it with oil and evenly layer the pre-cut pumpkin into small pieces. If the tomatoes are small, cut them into halves, if larger, then into several pieces, and lay them on the foil cut up. Also we place on the baking tray a whole washed up pepper, peeled and cut in half a head of onion and peeled cloves of garlic. Lightly grease all vegetables with vegetable oil and send to the oven, preheated to 100-130 degrees.

After 20 minutes remove the already prepared pepper from the baking tray. The rest of the vegetables are sent to the oven for another 15 minutes. So, our pumpkin caviar is already half ready.

We wait until the baked vegetables cool. Then with pepper and tomato carefully peel the skin. After that, the vegetable pulp is placed in a convenient dish and turned into a puree. You can do this not only manually, but also using a blender or a meat grinder.

The resulting mass is transferred into a saucepan and, constantly stirring, bring to a boil. Then add the pepper and salt. You can also put additional dried herbs, for example, hops-suneli or coriander. Cook our eggs on low heat for another fifteen minutes, stirring constantly.
