Pastry from puff pastry enjoys the well-deserved love of many gourmets. Loose and light, this dough just melts in the mouth, allowing you to enjoy the taste of a variety of fillings and not to overload the stomach at the same time. Lately, there are fewer housewives who prepare puff pastry at home, although there is no doubt that each of them has its own exclusive puff pastry recipe . Of course, there is less and less free time for modern women, and the quality of the ready-made dough offered by stores is getting higher, and yet what is prepared by one's own hands can hardly replace a purchased semi-finished product.

Puff pastry is yeast and fresh.

Fresh flaky pastry has many varieties, it can add ingredients such as eggs, milk, kefir or dispense with them, but there are general rules, the fulfillment of which ensures obtaining a perfect result.

  1. Before baking, the products of puff pastry are cooled for a while, not allowing freezing.
  2. Baking tray only moistened with cold water, without lubricating it with fat.
  3. Carefully cover the top of the yolks with the yolk, making sure that the edges of the puff remain dry. Otherwise, they will stick together during baking and prevent the dough from rising.
  4. Chilled products are quickly placed in a preheated oven so that the oil does not melt.

The classic puff pastry recipe includes the following components: 500 gr of wheat flour, 400 g of creamy butter, cold water, a teaspoon of any acid (lemon, vinegar or vinegar), and ¼ teaspoon of shallow salt. It is very important that the flour for the puff pastry is only of the highest grade, the water is icy, and the amount of salt and acid strictly corresponds to the proportions specified in the recipe, otherwise the quality of the finished products will decrease significantly.

The preparation of a puff pastry begins with the fact that the total amount of flour is divided in half, one half is thoroughly mixed with the cooled butter, rolled into a square layer having a thickness of about 2 cm and placed in a refrigerator.

The second half of the flour is poured into a hill and made into it a small pit, into which ½ cup of ice water is poured. In water, salt and citric acid are pre-dissolved (lemon juice can be used instead of acid). Stir the elastic dough, cover it with a kitchen towel and leave for half an hour. After that, this dough is also rolled into a square, making sure that it turns out to be twice as large as a square of butter and flour.

Next, the homemade puff pastry is prepared as follows: in the middle of the larger square of the dough, place the smaller one - from butter mixed with flour, after which the edges of the dough are raised, folded like an envelope and tied. Lay the envelope on a flour-strewn table, and smoothly roll out in all directions to a thickness of 1 cm.

The resultant rectangle of the dough is cleaned of excess flour, folded four times and again set aside for half an hour in the refrigerator.

Next, roll out the dough again, fold it four times and cool for 30 minutes.

A similar operation is done for the third time, after which the dough is used to prepare the products.

There is also, a recipe for puff pastry chopped instant cooking:

Chilled butter (200 g.) Is cut into pieces, add two glasses of flour and chop everything together until the crumb is formed. The resulting mixture is collected by a slide, made deepening, as in the first recipe, and gradually add ½ cup of water, combined with a pinch of salt and a tablespoon of vinegar. Ready dough is placed in the refrigerator for at least 1 hour, after which it is considered ready for baking.
