Recipe for vareniki with potatoes: fast and surprisingly delicious

Vareniki is an unusually tasty dish, popular far outside of Ukraine, which is considered their homeland. In fact, the history of the origin of this recipe is very ancient, and it is impossible to track it, but it should be noted that similar dishes are found in the kitchens of many peoples of the world, from Asian to European. Nevertheless, such vareniki, as we are accustomed to seeing them, have become the most popular in Ukraine, and its inhabitants themselves consider them an integral part of Ukrainian cuisine.

Vareniki are prepared with different fillings, but almost all of them are sweet, because they consist of fruits or berries, but what about those who do not like sweets? For them, there are not so many options, and, according to numerous opinions, the most delicious of them is the recipe for vareniki with potatoes. I must say that vareniki with potatoes - is also a fairly common concept, since there are lots of options for such a filling, but many do not stop even on this and come up with their own.

Before you cook dumplings with potatoes, you need to make a dough for them. The dumplings dumplings are prepared in the following way: two, two and a half cups of flour and one egg are taken for a glass of water. In the place of water you can take milk, yogurt or kefir. In the sifted flour, egg and salt are added, and then little by little water is poured in, and everything is mixed. When the dough becomes quite dense, but still very plastic, you need to knead it very well and leave it for at least 20 minutes, pre-wrapped in polyethylene. You can put it in the refrigerator for this time. At this time, you need to do the stuffing.

One kilogram of potatoes should be boiled until ready in salted water, and then carefully drain all the water. Potatoes should be properly suppressed. Traditionally, the recipe for vareniki with potatoes involves refilling potatoes with fried onions - this amount of onion will need one head, but if you want, you can take more. The onion is ground and fried until golden, after which it is added to the potatoes. Fat for toasting a bow can be used by anyone - the one that you like best. It is very tasty, if you pre-fry cracklings to ensure that they have given enough fat, and then fry in the same bow. The same mixture can be filled with vareniki with potatoes.

In general, the recipe for vareniki with potatoes can still be varied. For example, you can add finely chopped dill, you can add fried in potatoes, grated raw onion, cheese, grated or cut into large pieces, fried fresh or soaked dried mushrooms, spices.

You can mold vareniki in several ways: you can roll out a large layer of dough and cut from it a cup of the necessary size circles of the desired diameter, or roll out small pieces of dough to a certain thickness - it all depends on how someone is comfortable. The thickness of the dough should be 1-2 millimeters, but everything, again, depends on the taste. Many believe that dough for dumplings should be rolled very thinly, but this is not entirely true, and the thicker the dough, the less likely that dumplings will not tear during cooking. The diameter of the circles should be about 5 to 7 centimeters.

Then, the amount of stuffing is laid out on the workpiece so that the dumpling can turn out to be rather tight, but it could be easily closed. The edges are joined and tied in any convenient way, best of all two times - at first simply, and then the edge can be tucked a few millimeters and clipped again. It is also possible to moisten the inner edge with water - this will give the seam a great deal of strength.

Cook the vareniki in salted water for 2 to 3 minutes, if they are not frozen, and about 5 - if they are frozen. Before you cook vareniki with potatoes, you need to make sure that the water is boiling properly. They are served with seasoned or roasted or buttered, and very good together with sour cream - the most delicious if the cold sour cream is served to hot dumplings in a separate bowl. As you can see, the recipe for vareniki with potatoes is quite simple, but the dish turns out to be incredibly tasty.
