How to cook a classic cheesecake?

This traditional American delicacy is popular all over the world, and lately it has become more and more admirers in our country. To prepare this delicate pie, you need the following ingredients: 750 grams of sour cream 25% fat, 200 grams of regular pastry, 3 protein, 5 yolks, 120 grams of sugar, 2 st. Spoons of caramel, a packet of vanilla sugar. For the standard cheese pie, the soft Philadelphia cheese is used, but in our stores it is still rare to meet. Instead of this cheese we will apply cheese mass, wrung out of fatty sour cream. Cheesecake is made in the following order:

  1. Sour cream is spread in gauze, which is folded several times, and we strain it on the sieve for 5 hours. Periodically, this mass can be turned from one side to the other for faster separation of serum. From this mass of sour cream for 5 hours can stand up to 150 ml of serum.
  2. From the whole cookie is laid out the edge in a wide form for baking. The rest of the shortbread cookie is painted to a fine crumb and poured onto the bottom of the mold.
  3. Proteins and yolks of eggs are thoroughly mixed together with sugar and vanilla. The egg-sugar mixture is mixed with the cheese mass obtained after draining the whey.
  4. The mass obtained during mixing is laid out in a mold, and its surface is gently smoothed.
  5. From above on the cheese-egg mass laid melted caramel. Using a knife or fork, caramel is smeared on the surface so that different patterns are obtained.
  6. The classic cheesecake is baked for about 50 minutes in a heated oven to 180 ° C. The finished pie is served completely chilled.

Classic cheesecake can be prepared according to another recipe. To make it, you will need the following ingredients: shortbread cookie - 200g, curd cheese - 600g, 100g cream butter, 35% cream - 100ml, 2 packets of vanilla sugar, 130g of sugar, 3 eggs.

Classic cheesecake begin to cook with grinding cookies into a crumb. This can easily be done with a blender or with a rolling pin and a plastic bag. Add the softened oil to the cookie crumb. The whole mass is thoroughly mixed and laid out in a prepared baking dish. You can put paper for baking on the bottom of the mold . Mass of crumbs with oil should be slightly rammed along the wall and bottom of the mold, giving it the shape of a groove. The prepared substrate must be cleaned in the refrigerator while the filling is being prepared.

For filling the pie sugar, vanilla sugar and curd cheese are mixed with a whisk. Eggs are hammered into the resulting mass and again everything is thoroughly mixed.

In the cooled base we spread cheese mass, gently leveling its surface. The bottom of the baking dish is wrapped in foil and placed in a large mold or on a deep pan filled with half water.

Classic cheesecake is baked in the oven, heated to 170 ° C for about 90 minutes. The surface of the pie should be slightly toasty.

After turning off the oven, the cheesecake is cooled already without a water bath right in the oven with the door open for about an hour. Another hour the pie should be at room temperature, after which it is sent to the refrigerator for 5 hours. If it will stay in the refrigerator longer, it will become even more delicious. With a knife and fork, you need to carefully separate the cheesecake from the shape and put it on the dish. Cut the cheese cake with a very sharp knife, otherwise it may be ugly to crumble.
