Braga as an independent drink has long been familiar to mankind. It is not known who first invented this way to process the products. Most likely, the very idea of the possibility of fermentation was suggested by nature, and people only peeped and used to make a drink. So, probably, and there was the first recipe for mating. The name of the product you receive determines the name of the cooking process. Brave at home involves a short process of fermentation and the same restraint. Such a drink turns out to be a small fortress: from three to eight degrees (sometimes up to fifteen). From the "relatives" of the drink you can specify the keel - the Finnish brag. This drink is made from yeast, sugar and water with the addition of orange juice (to improve the flavor). Fame is also used by the English pruno - a drink popular in prisons. In Russia (among peasants) were previously popular: the bravand - a bread drink with various additions and a mead - a hop-drinking beverage based on honey.

Mechanism of manufacture

How is the mating done at home? Alcohol (along with carbon dioxide) is produced as a result of the vital activity of ordinary baker's yeast. They need sugar and water for this. "The state of health" of yeast is an important moment in the preparation of the berg. It is necessary to maintain the optimum temperature - from 25 to 40 degrees, because at a lower temperature they "fall asleep", and at a higher temperature they can die! If the yeast "fell asleep", the solution should be put in a warm place - this should help to resume the process. And if the temperature rises above 40 - put in a cooler place and add another portion of yeast. Periodically mixing the mass, you can speed up fermentation. It is said that in the old style stylalka, brew for moonshine is prepared in a few hours! Also, some add catalysts: tomato paste, potatoes, hops, peas (anything one).

Sugar

Much depends on the concentration of sugar in the solution. The more it is, the faster the process of fermentation. But if you go too far, when the fortress reaches over 14 degrees, the yeast begins to die from the alcohol produced by them. Sugar should be completely reworked. At the end of the process, try the tinsel. It should be bitter, without a sweet taste. A little bit of advice: if you are thinking about how to put a bunch together in order to drink it later as an independent drink, then put less yeast, but more sugar. So you can get rid of the yeast taste.

Capacity

An important role in how to make a bunch, plays utensils, in which you will prepare it. A large plastic barrel for storing food liquids (20 liters or even 30) is suitable for this purpose. You can use a glass bottle of similar volume. Disadvantages: it fits easily enough, and it has a very narrow neck. If you do not plan to produce drinks on an industrial scale, then you can come up with a three-liter glass jar and a five-liter plastic bottle from under purified water.

During the preparation of the beverage, ethyl alcohol can react with oxygen and form acetic acid. Hence, it is necessary to secure the brew from penetration of oxygen into the tank at all stages. For this, the water gate is used. On it moves the extra carbon dioxide from the bottle, coming from the tube into a jar of water. By the way, the intensity of the formation of bubbles can control the process of fermentation (this method is also used in the production of wine).

What else can you do to make a good mating at home? Put a medical glove of rubber on your throat. In the area of the fingers pierce the glove with a pin. Excess carbon dioxide will flow through the hole. During the whole fermentation process, the glove will stand. Once fermentation is over, it will fall off. This means that the mash, made at home, is ready for use or for further processing. After all, it is also the basis of moonshine. And the better the raw materials - the moonshine gets better.

Brace at home: the recipe is basic

The optimum ratio of products: three liters of warm boiled water - one kilogram of sugar and one hundred grams of yeast. If the capacity is large, proportionately increase the amount of raw materials.

Malt

In principle, the mash can be made from any organics containing starch or sugar. The main criteria are the price of raw materials and its availability. How to make a starch-based mash? To convert it to sugar, malt is needed, which is in the grain (seeds). The grain begins to germinate, the enzyme activates and converts the starch into sugar, which feeds the fetus. To get the enzyme, you need to germinate wheat, for example. Soak it for several days in the water. When the shoots appear, dry them, separate them from the grains, and the latter we ground into a powder.

From grain

It is necessary to take: 1 kilogram of grain, 3 liters of water, 50 grams of yeast, half a kilogram of sugar, 200 grams of malt. All mix and stand for about two weeks in a warm place, stirring and watching the temperature (until the process of fermentation stops - look at the reaction of the shutter).

From potatoes

How to put a bunch of strawberries? It is necessary to take: 8 kilograms of potatoes, 10 liters of water, 200 grams of malt, half a kilogram of sugar, 150 grams of yeast. Potatoes must be peeled and grated. Next, you have to mix it with other ingredients, add the leaven of yeast. Insist for two weeks. Such raw materials are mainly used for further addition in moonshine.

Bramble from jam

Ingredients: 6 kilos of any sweet jam, 30 liters of water, 200 grams of yeast. Jam from large fruits must be freed from bones and grind in a meat grinder or in a blender until smooth. In the water, we dissolve the jam and add the prepared yeast. We put on fermentation for about a week. Such a jam from jam is well drunk as an independent drink. If you are going to distill, then you can add 3 kilos of sugar to the substrate before fermentation. In this case, the output of moonshine will be increased.

From sweets

Ingredients: 5 kilograms of caramel, 200 grams of yeast, 20 liters of water. First we chop the sweets and dissolve them in hot water. Slightly cool. Yeast is dissolved in warm water and mixed. Leave to wander for five days in a warm place, controlling the temperature. You can drink this drink, or you can leave it for moonshine.

Mead

Ingredients: 3 kilos of honey, 1 kilogram of sugar, 300 grams of yeast, 25 liters of water. Honey and sugar are dissolved in hot water (the temperature does not exceed 60 degrees, otherwise some useful properties of honey will be lost). Yeast is dissolved in a small amount of warm water (the temperature does not exceed 40 degrees, otherwise the culture may die). Mixing. We put to wander in a warm place for a week. A delicious mead is ready! It can be enjoyed with a chilled alcoholic drink. For this application, mead can only be made with honey. And for the distillation add another kilogram of sugar.

From juice

10 liters of any sweet juice (preferably without preservatives), 300 grams of yeast. Yeast is dissolved in warm juice. We insist a couple of weeks (until the end of the fermentation process).

With dill and currant

Take 6 kilos of sugar, 30 liters of water, 200 grams of yeast, a glass of black currant, a bunch of dill dry. Mix everything, add the diluted yeast. Infuse for a week, then - surpass.

With milk and peas

Ingredients: 1 liter of milk, 5 kilos of sugar, 15 liters of water, a kilo of peas, half a kilo of yeast. Mix everything with water, add prepared yeast, insist in a warm place for a couple of days. Then - overtake.

With bread, milk and potatoes

Ingredients: 25 liters of water, 5 kilos of sugar, a liter of milk, 4 loaves of black bread, 5 kilos of potatoes. Bread finely chopped. Grate the potatoes. All mixed and insisted for several days. Then - overtake.

From apricots

It is necessary to take 10 kilos of apricots without a stone, 10 kilograms of sugar, 100 grams of yeast, 3 liters of water. Sugar is bred in warm water. Apricots are passed through a meat grinder and mixed with syrup in a large container. Add the yeast. We set to wander in a warm place until the end of the process.

Of grapes

We take 10 kilograms of grape cake, 5 kg of sugar, 30 liters of water, 100 grams of yeast. Wanders a week.
