Penicillin cocktail: composition, recipe, cooking rules

Cocktail culture is conquering the world more and more. But most beverages were invented a long time ago, and they managed to become classics. One of the last recognitions of the Barmen Association was the cocktail "Penicillin" invented by Sam Ross in the new millennium. Mixologist himself assures that he has only perfected the long-known "Whiskey Sauer", but colleagues do not agree with this: they believe that he said a completely new word in the art of creating cocktails.

Sam Ross's recipe: the right ginger

What is unique about Penicillin cocktail? Its composition for the first time in the barman history includes a single malt whiskey. However, this is not the only nuance and secret (although it is not kept secret in secret). Ross believes that the pledge of the proper taste - with knowledge of the cooked ginger juice. It is wrung out in a centrifuge or a kitchen juicer and is flavored with a small amount of sugar. Conditions for cooking are only two. First, you can not replace sand with syrup, otherwise the root fragrance will disappear very quickly. Secondly, it is strictly forbidden to boil ginger in honey or syrup, as some bartenders do. With this approach, not only the fragrance of fresh spice, but also its useful properties is lost. And the cocktail "Penicillin" turns into a private, a passing drink. But properly prepared juice can be used all evening without damaging the cocktail.

How to make syrup?

Syrup in the drink is exclusively honey. The variety of bee products does not matter much: at least grassy, at least lime, though buckwheat. The main thing - not candied. A syrup is prepared from three parts of honey in one volume of water. To accelerate the dissolution, it is permissible to preheat the mixture, but not more than 60-70 degrees, so as not to kill the benefits and smell inherent in honey.

Rules for combining ingredients

As the alcohol for the cocktail, Sam Ross suggests using Laphroaig whiskey, which perfectly balances and harmonizes the aromas of ginger with honey. However, the application of another "smoky" variety is allowed.

Particular attention barman pays the order of "assembling" a cocktail. In his opinion, first you need to lay down citrus components, then - sweet, after - alcoholic. Ice rushes in the last turn, because it immediately begins to melt, reducing the taste of the drink.

Well, finally, the original ratio of ingredients:

  1. 60 ml blended whiskey from Scotland.
  2. 22.5 ml (it is thought that up to a tenth of a milliliter accuracy should not be observed) lemon juice, only squeezed.
  3. 12 ml of syrup from honey.
  4. The same amount of ginger juice.
  5. 7.5 ml (roughly speaking - a dessert spoon) of Laphroaig whiskey.

Whipped everything except the last component, filtered into a glass with ice, top pours out No. 5 from the list, is garnished with ginger (preferably candied).

Penicillin cocktail: recipe in a simplified version

Not all the mixer's workers scrupulously follow the author's formula. Usually bartenders go on a simpler path. In their performance, the cocktail "Penicillin" looks like this.

A lemon peel is removed from the lemon, designed to become a decoration. The juice is pressed into a shaker, which also places a pile (50 ml) of blended whiskey, a spoon (15 ml) of ginger syrup, a piece of fresh root and egg white. The latter is an explicit reference to the cocktail "Whiskey Sour", which is covered by a modest Sam. All this is shaken for 5 seconds, ice is added, a couple more shakes - and a glass.

Those who wish can prepare cocktail "Penicillin" by both ways and compare. In principle, who likes what, and to each his own.

Alternative: "Pink penicillin"

This cocktail is known as one of the ten most "killer", despite a rather innocent "appearance." For him, schnapps 99 Bananas, Japanese melon liquor Midori and cream are joined in equal shares (traditionally - 30 milliliters each). To soften the sharp taste of schnapps, the grenadine is added - its amount depends on your preferences. In some recipes it is recommended to replace melon "Midori" with watermelon.

A cocktail is considered invigorating. But I think that people who are not accustomed to alcoholic variety will not stand more than one portion, at least in a conscious state. If you prefer to remember the evening and do not blush for the morning, it will be better to prefer the cocktail "Penicillin", the recipe of which suggested Sam Ross: tasty, unusual, and you can sip long enough.
