Celery soup - recipe, recommendations

Celery is a widespread in our region vegetable garden. The most famous is leaf celery. It has long been used in cooking as a spice and in fresh and dried form. Another type of celery is grown for fleshy, juicy petioles. Just recently, in our kitchen gardens and, accordingly, the tables appeared root celery. These are large, rounded, brownish-white root crops with dense flesh and a specific celery flavor.

What can be made from celery? From it you can prepare a full dinner of three dishes: a salad of celery cherries, a celery root soup, a vegetable garnish. Lunch can be vegetarian or meat, but adding this spice will bring flavor and piquancy to any dish. Soup "with celery" or "celery" - these are two different recipes. Celery in a small amount added to salads, vegetable soups, meat and vegetable stews along with other spices or in equal proportions with other vegetables. In the second - celery is the main and main determining taste of the dish.

Pour a half liter of water into the pan. We need a rich broth, so we put meat, bay leaf, a half-cut onion, black pepper into cold water. After boiling, the meat should be cooked for about 2 hours. During this time we prepare vegetables. Carrots, turnip (or trout) three on a large grater and pass in vegetable oil. Add the sliced tomato (or tomato paste) to the same frying pan. Celery cut into small cubes and dipped in the resulting vegetable mixture. Stew until soft.

Boiled meat is removed from the pan, we decant the broth and put it back on the fire. In the broth we put the peeled and diced potatoes, cook it. When it is almost ready, add the vegetable mixture to the pan and cook the potatoes. We serve hot. We cut the meat and put it in each soup plate. We pour soup, season with sour cream and sprinkle with finely chopped herbs.

Tomato or tomato paste can be replaced with citric acid (add a little to the ready-made soup), whitewashed with dry wine (pour half a cup into a frying pan with sauteed vegetables) or juice of half a lemon (add it already to the plates).

Such a vegetarian soup of celery, the recipe of which does not include meat, can be cooked in twenty minutes. If you exclude potatoes from the ingredients, and add kohlrabi cabbage cut into strips, then you can recommend it for a weight loss diet. Experience shows that soup with a lot of vegetables is more readily eaten by puree, so we blend it with a blender.

Celery has many useful properties, contains a large amount of minerals and vitamins, necessary for our body. Nevertheless, in medical nutrition , it should be used with great care. In some cases, a vegetarian soup of celery is recommended, the recipe of which does not include acidic foods (sour cream, tomato paste, tomatoes). In a saucepan cubes of root celery stew with vegetables. Then the hot water is added. Instead of the root one can use petiolate, juicy pieces become soft in 5 minutes. A mixture of low-fat cream and flour and a single raw beaten egg poured into the almost ready soup with a thin trickle. Served hot with greens and toast.
