Meat soup with pearl barley is prepared as follows:

Meat is cleaned of films, bones and tendons and cut into small pieces, which are sent in one liter of boiling water and cooked on low heat. In this case, it is necessary to periodically remove the foam from the broth. There also add two bay leaves, salt and pepper.

After half an hour, add chopped parsnip and celery, garlic, diced carrots and potatoes and cook for another twenty minutes. After the time has elapsed, the laurel leaves are extracted from the broth, croup is added and cooked for about an hour.

While cooking soup with pearl barley, chop the onions and fry in oil, add the tomato paste, three tablespoons of broth and stew for ten minutes. Fish soup with pearl barley

Ingredients: two hundred and fifty grams of fish (cod, boar, hake or toothfish), one carrot, twenty grams of butter, two onions, one and a half liters of broth or water, pearl barley, salt and spices.

From the pearl barley cooked porridge, adding butter during cooking. Fish are cleaned, cut into pieces and boiled, adding salt, onion, roots and spices to the water. The resulting broth is filtered, pearl porridge is put in it and brought to a boil.

When serving in a soup put a piece of fish and sprinkle it with herbs.

Mushroom soup with pearl barley

Ingredients: four feathers of green onions, one carrot, one onion, two potatoes, fifty grams of dried mushrooms, half a glass of pearl barley, one spoon of vegetable oil, two tablespoons of butter, salt and spices.

The pearl barley is washed and discarded in a colander, which is installed over water boiling in a pan and covered with a lid. Thus, the cereal is steamed for half an hour.

Mushrooms are washed, placed in a bowl, poured into two glasses of boiling water and left for fifteen minutes. After that, they are thrown into a colander, cut into strips and left. Infusion of mushroom filter, bring to a boil, add a barley and cook for twenty minutes.

Vegetables are cleaned and cut into cubes, then add to the soup with pearl barley and cook for ten minutes.

Meanwhile, in a frying pan heated oil (vegetable and cream), fry onions and carrots, add mushrooms and continue to cook for five minutes. After that, everything is added to the soup and boiled for a few minutes. The prepared dish is covered and allowed to stand for ten minutes. Serve it, sprinkled with chopped green onions.

Thus, soup with pearl barley is not only satisfying, but also tasty, and a useful dish. It contains a large number of nutrients necessary for the life of the body. One should only remember one rule when preparing the first dishes from this cereal. So, since perlovka requires a long cooking time, it must be pre-soaked in water and only the field to cook.
