Cabbage 'Provansal'. The recipe for a delicious snack

Recipes for cooking sauerkraut are countless. The traditional dish of the Russian table and one of the most favorite, useful and tasty snacks was made not only in every house and every mistress in its own way, but in every village, county and region there were their ways of pickling and souring, accompanied by certain rituals, signs, even Conspiracies.

Cabbage "Provansal", the recipe of which has become very popular since some time, also differs a great variety in the methods of preparation. They are so many different, not at all similar to each other, that if you put on the table a few bowls with cabbage "Provansal", prepared by different housewives, it will be difficult to say what is common between them, except, of course, the main ingredient.

It is also difficult to determine the original classic recipe for this cabbage. However, we can safely say that in the cabbage "Provansal" must necessarily be present various additional ingredients, namely, apples, cranberries or cranberries, prunes or grapes, carrots and various spices that give it so refined, worthy of the name, taste. Let's try to select from the innumerable number of recipes the most basic and interesting. For example, cabbage "Provansal", the recipe of which is a salad of sauerkraut with various fruit and berry additives.

Cabbage "Provansal". Recipe with cranberries and fruits

The basis of this recipe is sauerkraut with large chunks of cabbage. There is a way when fermenting whole or halved heads. Cabbage leaves are cut into squares, about 3x3 or 5x5 cm. They are placed in a wide volumetric container for subsequent mixing with various additives.

As additives, you must take berries of cranberries, washed in boiled water, as well as pickled plums, grapes, and soaked apples to choose from. Large fruit is cut into slices, free from bones. Cabbage with fruit and berry additives is gently mixed, so that there is not a lot of juice, put into jars and pour hot marinade. Day after two cabbages "Provansal" with cranberries ready. Before serving, a little vegetable oil is added to the table. You need to consume it as quickly as possible, as this salad quickly sour.

Marinade filling is prepared as follows. A quarter of a glass of cabbage brine or marinade from fruit, a half tablespoons of 2% table vinegar, two teaspoons of sugar, cinnamon and cloves are mixed and brought to a boil on high heat.

Cabbage "Provansal". The recipe for cabbage salad for the winter

This is a completely different way of cooking cabbage "Provansal". Two kilograms of cabbage are finely chopped, mixed with finely chopped garlic (2 slices), chopped carrots, half a glass of vegetable oil and two tablespoons of 9% vinegar. The mixture is decomposed into jars, filled with marinade, which contains half a liter of water, one and a half tablespoons of salt, half a glass of sugar and pressed down by a load. Two days later the salad "Provansal" from cabbage is ready.

Cabbage "Provansal". Recipe with Bulgarian pepper

For two and a half kilograms of cabbage you need to take half a kilogram of bell pepper, as much carrots, a few mocha apples, grapes, plums, cherries. Cabbage is cut into large squares, mixed with sliced Bulgarian pepper, apples, grapes, plum and cherries, free from bones. Add two thirds of a glass of sugar, a glass of vegetable oil, a glass of six percent vinegar and two tablespoons of large salt. All carefully mixed, put in jars under pressure, and two days later cleaned in the refrigerator. Cabbage "Provansal" with Bulgarian pepper and fruit is ready.
