Everyone, perhaps, knows that the main ingredients of classic vinaigrette are beets, nightshade tuberous or, more simply, potatoes, carrots, crispy sauerkraut, as well as pickles and green canned peas. Traditionally, the composition of Russian salad includes sauerkraut, but there are exceptions. First of all, you need to put the vegetables to cook, after which you can start cutting into small pieces of salted cucumber and onions, as well as shredding white cabbage. In order to prepare a vinaigrette in such a variation, the following ingredients will be required:

  • Salted and fresh gherkins.
  • Beet.
  • Onions of sweet varieties.
  • Potatoes.
  • Vegetable oil can be replaced with linseed oil.
  • Salt.

Preparation of any variation of vinaigrette begins with the fact that you need to boil the vegetables. While the potatoes, beets and carrots will be cooked, you can finely chop the onion and chop the cucumbers. All boiled vegetables should be peeled and cut into cubes, the beets can be lightly fried in a small amount of vegetable oil. Prepared ingredients mixed well, add salt and dressing. How to cook a salad with cucumber?

The obligatory ingredient of the traditional Russian salad is salted cucumbers, but, even if they were not available, you can always prepare a salad with fresh cucumber. To prepare this snack you will need:

  • Beet - 3 pcs.
  • Potatoes - 2 pcs.
  • Carrots - 2 pcs.
  • Fresh cucumber - 2 pcs.
  • Sauerkraut - 200 grams.
  • 1 onion.
  • Canned peas - 200 grams.
  • Aromatic vegetable oil (as required for refueling).
  • Salt.
  • Fresh greens (dill, onions).

All vegetables, except cucumbers, need to boil in the skin without the addition of salt. With canned peas pour out excess liquid, for convenience you can use a colander. Then add the prepared ingredient to the diced vegetables.

With the onion peel off the husks and cut into half rings, then scald with running hot water to get rid of the unpleasant odor and bitterness, and send to the rest of the ingredients. Cucumbers also cut into cubes and mix with all the vegetables, then season with vegetable oil. Put the prepared dish in a salad bowl and decorate with chopped herbs on top.

If desired, you can experiment a little with salad dressing. For example, replace the vegetable oil with a mixture of five chopped black pepper grains, a teaspoon of capers, a few drops of vinegar and three tablespoons of olive oil.
