Tomato soup: Mexican version

This is not the most common and easy-to-prepare recipe, but lovers of spicy and piquant cuisine will appreciate it. In addition, he is very nutritious and can replace a full dinner. So, we need:

  • 1 large onion;
  • 400 g of red beans;
  • 1 liter of strong broth (chicken, pork, beef - according to your taste);
  • 3 chili peppers;
  • 2 red bell peppers;
  • 3 teaspoons of the sauce of Chile;
  • 700-750 ml of thick tomato juice;
  • 100 grams of tomato paste;
  • Garlic to taste, but not less than 3 large denticles.

Preparation of soup should start in the evening. Pour the red beans with cold tap water and leave overnight. If possible, prepare broth in advance. In the morning, drain the bean liquid, rinse the beans and pour them into the broth. After the bean is boiling, add the tomato paste (water it does not need to be diluted) and the sauce of Chile. While the beans are being cooked, on a tablespoon of olive oil fry the finely chopped onion and chopped garlic. After 5 minutes of frying, add to the frying pan chopped chili and chopped red bell pepper. When vegetables "grab", fry together with butter poured into broth and leave to cook until the beans are ready. Before the end of preparation of the salt to taste, if necessary - add pepper, and pour out the tomato juice. After that, cook for 10 minutes and turn off. Let the mass cool slightly and grind it in a blender. Tomato soup, made according to the Mexican recipe is ready. Before serving, you can decorate with greens, add a little sour cream (it will soften the sharpness). Such a soup with garlic croutons is especially delicious .

Tomato soup in Turkish

This is another national recipe for this delicious dish, which is prepared much faster than the Mexican version.

For cooking you need:

  • 300 grams of tomatoes (the larger, the better);
  • 0.5 liters of light chicken broth;
  • 1 medium onion;
  • Several cloves of garlic;
  • A glass of tomato juice;
  • 250 g of cheese (preferably solid varieties);
  • salt and pepper;
  • Vegetable oil for frying;
  • Greens (1 small bundle).

In a saucepan with a thick bottom pour the vegetable oil (so that it covers the bottom with a thin layer) and put there a lightly chopped garlic. After a few minutes, when the garlic starts to brown, remove it from the pan and send it to the chopped onion. After he acquires transparency, add to the pan all other ingredients, including chopped parsley greens. Salt and pepper (if you like spicy - add a little red pepper). After this, simmer the vegetables in the broth about half an hour. Then lightly cool the future tomato soup and chop it with a blender. After this, the mass is again brought to boiling and, casting on plates, served on the table. In each plate add a handful of grated cheese (this makes sense only when serving a hot soup option) and decorate with greens.

These soup options can be safely used as the basis for creating new recipes, because tomato soup like any other allows all sorts of variations.
