Squid stuffed with mushrooms

The popularity of seafood in our country is constantly growing. Stores include shrimp and oysters, mussels and scallops in their assortment . But the most popular seafood, without any embellishment, with confidence can be called squid. In addition to a unique taste, they have a lot of useful substances. For example, they contain in a large quantity such a wholesome protein and various microelements and vitamins. Due to the unique form of this seafood, you can prepare squid stuffed with mushrooms, meat, vegetables - the choice of filling is limited only by the imagination of the hostess. Before the implementation of any recipe, squid must be cleaned of the reddish coating and film. Do this without preliminary heat treatment is not so simple. Therefore, it is necessary to put a container of water on the fire, sprinkle a little and even lower the defrosted carcass into the boiling water, hold it in boiling water for no more than a minute, then get it. Prepare and clean two carcasses.

Filling. Champignons (150 grams) cut into smaller pieces and put into a frying pan or saucepan, and rub one carrot there. Fry until half cooked. The resulting roast is combined with a little undercooked rice (cook a third of the glass) and grated cheese (150 grams). Stir the ingredients.

Stuff the squid with stuffing and put into a baking container. Pour the carcass with 100 grams of sour cream and sprinkle with cheese. Place in a preheated oven and bake for no more than 10 minutes.

Three carcasses rinse and peel, boil three eggs.

On vegetable oil fry diced champignons, onions and grated carrots. As soon as the onion turns golden color, cut the eggs and also send it to the frying pan. Mix and set to cool.

After the vegetables have cooled, grate in them 150 grams of cheese, all together salt and season.

Stuff squids, but not too tight, since they have the property of being stolen. The edges are fastened with a toothpick.

Fold a sheet of foil in the form of a plate, drip a little vegetable oil. Each carcass should be rubbed with salt a little, greased with a mixture of mayonnaise and ketchup. Lay the prepared squid, stuffed with mushrooms, in a plate of foil and wrap completely.

Put in the oven for 15 minutes, then get it, open the foil and bake again, but only five minutes.

Squid pre-boil in salted water for no more than two minutes.

Filling. Fry the chopped onions (2 pieces) and one grated carrot until golden, put into a bowl. Add to the vegetables two boiled sliced eggs and half a glass of boiled rice. In a frying pan fry about 300 grams of chopped mushrooms for about five minutes, then send it to a bowl.

In salted water, boil fresh shrimp for 10 minutes, after cleaning from the shell, get the loin and cut it into small pieces. Put them in a bowl with the rest of the ingredients, season with mayonnaise, crush several cloves of garlic and mix.

Ready-made stuffing squids, not forgetting that they will become smaller after heat treatment, the edges are carefully sealed with skewers.

Each carcass wrapped in a separate sheet of foil, put into a mold and bake for no more than 15 minutes at 170 degrees.

Ready squid put on plates and sprinkled with fresh chopped greens. This dish is perfect for any table.
