Soup - this is a very common dish, because without it just does not seem a full dinner. Use it as the first and main course because soup has a beneficial effect on the digestive system. Meat broth and vegetables contained in it contribute to the stimulation of appetite and better assimilation of food.

Cooking soups is not a difficult process at all, you only need to know the recipe for cooking, or you can fantasize a little.

I suggest a few simple recipes for soups that are nutritious and useful.

Duck soup with foie gras

Duck soup is very satisfying, thanks to a fat broth.

We will need: an average duck, a glass of millet, a little celery root, a small carrot, an average onion, a parsley root, two bay leaves, 10 peas, ground pepper, fresh dill and salt.

Preparation of soup: carefully sorted and washed the millet in a large amount of water, put it in a strainer, and let it drain completely.

At a duck we take out internal fat and we grind. We need three tablespoons of fat.

Heat the frying pan, lay down two tablespoons of duck fat, add finely chopped onions and fry until it turns golden. Then we cover the millet and continue to fry for another five minutes.

We put the duck in a saucepan, fill it with water, throw half of the uncooked bulb and put it on the fire. As soon as the water boils, reduce heat and cook for 5 minutes. After that, we remove the duck, and pour out the broth.

Take a saucepan with a thick bottom, spread the remaining fat, sliced carrots and celery, lightly fry. Add the duck sliced into pieces, pour two liters of water, bring to a boil and remove the formed foam. We put the bay leaf, peas and pepper for about an hour on low heat.

We serve soup from the duck to the table in a hot form, directly from the plate, sprinkled with herbs.

Duck soup with noodles

Necessary ingredients: carcass ducks, 300 grams of noodles, three liters of water, two medium carrots, parsley root, two onions, 25 grams of butter, four spoons of green peas (canned), several olives, fresh parsley and dill greens, two bay leaves, 10 peas and salt.

Preparation: the duck is thoroughly rinsed under a stream of clean water, put into a saucepan and poured with water. Add pepper peas, chopped parsley root and set to cook on the fire. Cook until the meat of the duck becomes soft.

Finished and chilled meat cut into cubes, and in the broth cook noodles.

Shink onions, cut into cubes carrots and fry in a frying pan, butter. Then add the sliced olives and green peas.

In the broth, where noodles are brewed, we lay out a roast, pieces of meat and a bay leaf. All the salt to taste, pepper and cook for about 15 minutes over low heat.

We pour soup from a duck on plates and decorate with greens.

Tuna soup

This soup is prepared fairly quickly and easily.

We will need: a can of tuna in oil, 3-4 medium potatoes, one carrot, a head of onions, a bunch of celery, spices and salt to taste.

Preparation: peeled potatoes cut into medium cubes, carrots rubbed on a grater, onion shredded with thin semirings.

We put the pan on the fire and after it boils we throw the potatoes, salt and cook for 10 minutes. After that, add the carrots, onions and continue to cook until the potatoes are ready.

A few minutes before the readiness, add the tuna, finely chopped celery and leave the soup to infuse for 10 minutes.

The above soup recipes are quite hearty, tasty and, above all, include products that are always at hand. Make variety in your daily menu and indulge your loved ones with delicious dishes.
