Soups have always been considered useful for the stomach. They have a beneficial effect on the digestive tract and prevent the onset and exacerbation of gastritis and peptic ulcer. Therefore, we will not forget the trivial truths and prepare a delicious homemade soup with pelmeni.

The dish is prepared quite quickly and without any special financial costs. Soup with dumplings - it's simple and at the same time delicious, if you apply culinary skills and do not be lazy to make pelmeni with your own hands. This is an important component that gives even more individuality to the dish, because with the same composition, each mistress will certainly have her own tricks of cooking, and then it's quite difficult to repeat. Soup with pelmeni will undoubtedly be your hit among the first dishes. It is possible to save time using store semi-finished products, but this option will be left to the extreme emergency, because as a home analogue you cook in the light of the tastes of your households, which makes it stand out.

To prepare a pelmeni soup , we will need the following products: 200 grams of any meat (for making a rich broth), 1 carrot, onion, 2-3 large potatoes, pepper, salt. For the preparation of dumplings, you need about 500 grams of pork and beef meat, 250-300 grams of wheat flour, 200 grams of chilled boiled water, salt, pepper, greens.

In a saucepan pour about 3 liters of filtered water and put it on the fire. Meat for broth cut into medium or small pieces to make it more saturated and rich. Add 5 grams of table salt and cook on low heat for about an hour.

While broth is being prepared, we will make dumplings. Meat for them washed, cut into pieces and put it for 10-15 minutes into the freezer so that it freezes and twists well in the meat grinder. We make stuffing. In it we add black pepper and salt to taste. Leave it for 10-15 minutes.

Let's start preparing a dumpling test. For this, we sift the flour into a bowl and pour boiled water cooled to a temperature of 25-30 ° C by a thin stream. We knead the dough to a homogeneous mass, it should turn out to be steep enough not to stick to the table and hands. Roll out on the working surface, sprinkled with flour, a dough not more than 3-4 mm thick. Cut out using a special mold or simply rim a glass of small diameter circles. In the center of each lay out a teaspoon of ground meat. Cut the edges of the pelmeni, and place them on the parchment paper in a freezer for 18-20 minutes for freezing. So the semi-finished product can be made with a reserve and stored in the refrigerator. Unforeseen situations with the lack of dumplings you will never have.

Meanwhile, the broth has certainly become rich and transparent. This is the basis for making soup from dumplings. In the boiling broth we spread the potatoes cut into medium-sized cubes. Cook for about 10 minutes. Then add the dumplings to the soup, and stir them constantly so that they do not stick together or stick to the bottom of the pan. As soon as they began to float, we proceed to the following preparations. On a large grater we chop the carrots, onions are cut into small cubes. In a frying pan, this vegetable mass is fried for about 5 minutes in oil over a small fire. Dumplings cook for 4-7 minutes, and add the fried vegetables. We wait until the soup with dumplings boils. Add the chopped dill greens, bay leaf, parsley.

Turn off and leave the soup with pelmeni pour under the closed lid for 5-7 minutes. We serve the first dish in the soup tureen, covered with a linen napkin: this will surely give the dish an extra charm. With such serving, even the economy-option looks like a royal meal.
