In order to stitch home-made dumplings, we will need the following products: 600 grams of flour, 1 egg, one and a half cups of water, 400 grams of beef, 400 grams of pork bold, one head of onions (can be more), pepper and salt.

It should be noted that Siberian pelmeni are considered a classic dish and can be cooked practically in every family. These ingredients are enough for 10 servings. First we will prepare forcemeat. We cut pork and beef in small pieces and let it pass through the meat grinder, along with the meat we skip the onions. Then pepper, salt and mix well. Mincemeat for dumplings is ready. Let us pass to the preparation of the test. We beat the egg and mix it with water. We add the flour gradually and knead the dough, it should turn out to be steep. I note that you do not need to salt the dough, since we will cook the dumplings in salt water. We let him stand for about 20 minutes. Then we roll a piece of dough into a thin layer, cut out the juices. In the center of each juice put a teaspoon of minced meat, fold in half, protect the edges and form Siberian dumplings. And so we proceed with the rest of the pel'menki.

Cook Siberian dumplings should be on medium heat in salted water, no more than 5 minutes. For the aroma, I still put a laurel leaf in the broth. We serve Siberian dumplings with sour cream, sauce or mayonnaise - as you like. My grandfather eats with sour cream and herbs, tried it - very tasty.

It should be noted that in each region, Siberian pelmeni are prepared in their own way. For example, my friend from Tatarstan says that the real stuff for Siberian pelmeni is prepared from three kinds of meat - lamb, beef and pork, all in equal proportions. But this is a matter of taste.

Surely every housewife knows that you can prepare delicious dishes from dumplings. For example, pelmeni with liver in pots. To do this, a culinary survey will require 36 pieces of pelmeni (at the rate of 6 pieces per pot, I have 6, so we have the same number of servings), 100 ml of cream, sunflower oil, a pair of medium bulbs, 100 grams of any liver (pork or Beef, which one is more like), a little water boiled, a little flour of the highest grade, black pepper (ground), tomato paste, salt and greens.

Dumplings are laid out on pots and pour a glass of water in each. The liver is finely chopped and fried with onion in vegetable oil. Then pour it with cream and tomato paste, bring in a handful of flour to make the sauce thicken, put out for about five minutes. Next, stewed liver with sauce spread on pots over dumplings and sent to the oven to bake. The dish is cooked for about half an hour. Then we take out the pots and sprinkle each one abundantly with greens: parsley, dill, basil and serve to the table until it is cold. In the same way, you can prepare other dishes from pelmeni, for example, with vegetables, sausage, mushrooms, with potatoes. It turns out also very tasty. Especially the summer has come, vegetables full of vegetable garden - it remains only to dream up. By the way, casseroles from dumplings are not bad .
