Minced meat for dumplings: from traditional classics to original fillings

Recipe 1. Pelmeni with traditional stuffing of pork and beef

Chicken fillet (500 g) through the meat grinder, scroll 2 times, pour in the milk (120 ml), salt-pepper. You can season hops-suneli or other favorite seasoning for poultry. Onions (100 g) finely chop and fry in a skillet in oil (only not in vegetable, but in creamy), let cool. Mix the poultry meat and chicken forcemeat.
Recipe 2. Dumplings stuffed with chicken and mushrooms
Brush, rinse, cook until freshly prepared fresh mushrooms (300 g), dry and finely chop. Fry the mushrooms and finely chopped onions (100 g) in vegetable oil. At the very end of the frying, add chopped chicken fillet (300 g) into the frying pan. Salt the mince, season with crushed fresh ginger (5 g) and black pepper (3 g). Thoroughly stir the filling to a smooth state.
Minced meat dumplings for fish
You will need 700 g of small-boned freshwater fish (catfish or pike perch, for example), which should be grinded with a meat grinder along with three small onions and soaked in milk or cream with hard white bread (50 g). Salt-pepper the mass to taste.
Minced meat for vegetarian dumplings (meat-free)
Dumplings with cheese and cheese filling. Put 200 g of cottage cheese (fresh) in a bowl, grated Parmesan (60 g), chopped melted cheese (60 g). Here, hammer an egg, add olive oil (25 ml), ground black pepper (4 g). Salt to taste and mix the ingredients.

Boil rice until it is half ready. You need 150 g for filling it. Soak the dried mushrooms (100 grams), rinse, boil and discard in a colander, and when the water drains, finely chop 50 grams of onions. Lightly fry mushrooms and onions. When the roast cools down, mix it with rice, salt, add black ground pepper (3 g) and ground coriander (2 g).
