How to separate protein from yolk: cooks for a note

In many dishes, eggs require something: either proteins or yolks. Sometimes you need both, but you have to add each separately. We will consider the 4 most popular ways how to separate the protein from the yolk.

Method number 1. How to separate protein with bile by using fingers?

There are several variants of this method. The easiest way out is to break the egg into a plate and gently remove the yolk with your fingers. You can use a tablespoon, but it is more likely to damage the film around the yolk.

For this method it is better to get thin rubber gloves. They can be purchased at the pharmacy.

Another variant of this method is characterized by the fact that the egg is broken into the hand, and the protein flows down through the fingers into the plate, and the yolk remains on the palm.

Well, the third (most painstaking) option: the egg is broken into a bowl, the yolk is covered with dishes of the same diameter with yolk, and the squirrel is removed with a spoon in another bowl.

Method number 2. How to separate the protein from the yolk with a funnel?

For the separation, a commercially available plastic funnel or paper, made by yourself (make a paper bag with a hole at the bottom of 1-1.5 cm) will do. Put the funnel into a glass and break the egg. Wait until all the protein drains, and the yolk remains in the funnel.

How else to separate the protein from the yolk? For the dexterous there is another version of the latter method. It consists in breaking the egg into 2 parts and pouring the contents over a plate or cup, gradually separating the yolk, which eventually remains in one of the shells, and the protein enters the bowl.

If the protein strands do not allow the egg to separate, help them with a fork.

Method No. 3. Making holes

Consider how to separate the protein from the yolk by making holes. Small holes in the shell are made with a knife (you can have a needle or a paper clip) from above and below. The lower opening can be wider in width, so that the protein flows out of it unhindered, and the yolk remains inside. To speed up the separation procedure, the egg can be moved from one side to the other. After the protein has run out, the shell is broken, the yolk is poured into a separate bowl.

Method No. 4. Separator

If all the tips on how to separate the protein from the yolk, you do not fit, it is worth getting a separator. The separator is placed in a bowl and the egg is broken into it. The yolk must be in the middle. It remains to wait until the protein flows through the cracks in the separator and transfer the yolk to another plate.

And some more useful tips on how to separate the yolks from the proteins at home (and not only):

  • Wash the eggs before separating the yolks from the proteins with hot water to get rid of the bacteria that can be on the shell;
  • It is better to use fresh eggs;
  • It is easier to separate the proteins and yolks if the egg was in the refrigerator for at least 15 minutes;
  • For the separation of several eggs, one should take three bowls (or cups), one for the yolks, and two for the proteins (in the small bowl we will separate the proteins, and in the larger bowl add the separated proteins);
  • If some of the separated proteins or yolks are not needed at once, they can be frozen and used at another time. It is very convenient and practical for economical housewives.
