Ingredients

To prepare a jam from plums for the winter, you will need:

  • Plum - 2 kg;
  • Granulated sugar - 1 kg;
  • Starch - 4 tbsp. L .;
  • Ground ginger - 1 tsp.

Product selection

First of all, you need to choose the right products. It should immediately be noted that unripe fruits for this recipe are completely inappropriate. It is best to choose ripe plums that not only have a high glucose content but also have a suitable density. At the same time, such fruits are usually a little cheaper, which will save a lot. It should also be remembered that jam from a plum, the recipe of which involves the use of starch, should not be cooked from damaged fruit, as they will undergo minor heat treatment.

Fruits should first be thoroughly washed and dried. Then cut in half and remove the bones. Then, each half is divided into several parts to facilitate the process of subsequent cooking.

Preparation

After all the fruits are cut into pieces, they must be filled with sugar and left for 4 hours. So from them will start to be allocated juice that will exclude addition of water and will make more sated jam from a plum. The recipe is designed so that the fruits become slightly transparent, and the amount of liquid would be sufficient for cooking. Therefore, if this did not happen, it is worthwhile to increase the aging of the fruit in sugar.

After the allotted time has passed, it is necessary to shift the fruits into a metal container and put it on the fire, where it will be cooked with jam from the plum. The recipe recommends at this point to add spice to the dish. In this case it is ground ginger. He will give the jam a certain piquancy and enhance the taste. Also, at that time, starch is cast in, making sure that it completely dissolves.

After that, on a small fire for an hour, prepare jam from the plum. The recipe requires that the jam be stirred periodically. This can be done with an ordinary wooden spoon. Ideally, the best way to cook is to use the bakery.

Canning

After the jam is cooked, it should be poured hot on previously sterilized jars and covered with a special hermetic lid. Then the containers are turned upside down and placed in a warm place, where they are additionally covered with a towel. When the jam cools, it must be moved to a dark room until immediately consumed.
