How to cook eggs

Probably, each of us does not even think about how to cook eggs - it's so simple, filled with water, and let them cook: three or four minutes of soft-boiled and almost ten minutes hard-boiled, and what else is there to know? Only then they are either not cleaned, or, on the contrary, they burst during cooking - in general, we can not always be fully confident of the result of such an apparently elementary process.

How to properly cook eggs depends, first of all, on what kind of result we want to achieve. If in the case of hard-boiled eggs everything is more or less understandable - in order to get them, it is not necessary to properly cook hard-boiled eggs - it's enough to cook them longer, then soft-boiled eggs do not always turn out. But it must be remembered that with too long cooking, eggs also do not turn out very well: the surface of the yolk darkens, and it itself becomes stiff.

So, how to cook eggs? First of all, they need to be cooked in a small saucepan so that they can ride as little as possible on the bottom - this will reduce the risk of their cracking. To do this, do not put eggs in the water immediately from the refrigerator - it is better to first hold them in warm water or at least just at room temperature, otherwise they are almost guaranteed to break. True, the risk of this still remains - under the shell of the egg at its blunt end there is an air chamber, and when heated it can still break the shell, so it can be gently but strongly pierced with a needle. For reinsurance, you can add salt to the water, so that it is very salty - in this case, even if the egg bursts, its contents will not leak into the water when cooking.

Now about how to properly cook eggs so that they can be cleaned without problems. First, you need to take not the freshest eggs, but only those that are not less than five days old. If only the freshest are at your disposal, then you can use one trick: you must first shake them so that inside gurgles, but not so much that the protein and yolk do not mix, and then cook for several minutes longer - then they are with Easy to clean. After cooking, you can put the eggs immediately into the icy running water and hold them there for a couple of minutes - this also contributes to early cleaning. If neither of which helped - then you need to break the shell over the entire surface of the egg and clean it under running water - this will be the easiest way.

As for how to properly cook eggs, immersing them in boiling water or in cold water, there is no unequivocal opinion. In order to know for sure the cooking time, of course, it is much more convenient to put them into boiling water, but then the risk of their cracking will be much higher. But in the first case, the nutritional value of eggs will be preserved more fully. After boiling the hard-boiled eggs, you need to boil for 7-8 minutes, using the above recommendations, and an excellent result is guaranteed.

And how correctly to cook soft-boiled eggs? After all, for many, how an egg turns out, each time is a surprise, and sometimes it happens that you want something specific. Especially difficult is with children who love soft-boiled eggs and do not agree to other options - that's what Mom has to experiment to the finish. In this case, it is best to immerse the egg in the already boiling water, and in order that it does not crack, use the above tips, and cook for 4 minutes, best of all, using a timer - otherwise you can skip the moment. You can also boil them for one minute, remove them from the plate, cover them and mark them for 6-7 minutes, depending on the desired result. After 7 minutes, the protein will finally thicken, but the yolk will remain liquid. This method seems more reliable, but you need to remember that the amount of liquid was exactly such that it would cover eggs by 1 cm.
