Fungus mushroom

Red is an edible plate mushroom of the russet family, which got its name due to the orange color. Favorite food of Russian tsars and delicacy of our days, mushroom red is considered second after white in taste. Especially prized salted and pickled.

Fungus mushroom - description. It grows on sandy soils near coniferous trees in spruce, pine and mixed forests of Europe, the Urals and Siberia. Ryzhik likes to settle in shady cool places on the fringes and hills, where there is no thick grass. These mushrooms grow only colonies - next to large mushrooms you can always find very small ones. The time of collection depends on the weather conditions, most often it starts in August and can last until October. Before you "go" to the redheads, there is a harvest of oil on these places. It is not for nothing that these mushrooms are called satellites.

In addition to the characteristic coloration, the mushroom redhead has a funnel-shaped hat with dark concentric circles, a hollow leg and a specific odor. The size of the cap can reach up to 15 centimeters in diameter. Mushroom plates, located on the underside of the cap, have a bright orange color. The pulp of the redhead, when cut or pressed, first reddens, then changes color to green or brown. On the cut, usually a lacteal juice with a pleasant coniferous smell and a bright orange color is prominent. Gradually it turns green.

It is recommended to collect the redheads in the morning, as the fungi are damaged very quickly by the larvae and by the middle or end of the day they may be unsuitable for collection.

Types of redheads

There are two kinds of redheads that grow under different coniferous trees and have some differences in the structure, size, color, and discoloration of the milky juice. This pine (hog) and spruce (real) red.

Pine (hog), which is the most common in Russia, loves sandy soils and grows only next to the rhizomes of pine trees. It occurs in pine forests, sometimes around separately standing trees. The mushroom mushroom redhead has a distinct smell, yellow-orange color, a large fleshy bonnet, dense flesh and a rather short stem. It is mainly used in salt form. When salting, it retains a vivid color.

A spruce (real) redhead forms colonies near the spruce rhizomes. It grows in spruce forests mainly in the grass vegetation. A real redhead is characterized by a less strong smell and a less bright coloration than a hog species. It has a greenish hat of large diameter and a short stem. In wet weather, the mug is usually found on the cap of a spruce redhead.

And at the spruce, and at the pine redhead, the cap is at first flat with the edges twisted downward. With the growth of the fungus, the cap acquires the shape of a funnel and can reach a diameter of 15 cm. The length of the stem is approximately 9 cm, and the thickness is about 2 cm.

In dry summer, pine trees grow better, rainy crops are noted for rainy crops. Both species have approximately the same taste qualities.

Ways of cooking redheads

The most common way of cooking red-fishes is salting, in which they retain their coniferous flavor. In addition, rozhiki can pickle, fry, boil and even eat raw. For this, you need to take a freshly cut non-wormy mushroom, sprinkle the bottom side of the hat with salt and immediately eat. You can use rozhikov in the liver form. To make them, you need to thread the sprinkled salt on the stick and hold it over the coals until the salt dissolves and the bubbles appear.

Useful qualities of redhead

Salted mushroom sauce is a nutritious, high-calorie food and, according to these indices, surpasses beef, chicken and chicken eggs, being more easily assimilated. The redhead contains valuable amino acids, calcium, phosphorus, potassium, vitamins A and B1. The fungus's flesh contains anti-inflammatory and antibacterial substances. Fungus is useful for rheumatism, impaired metabolism, tuberculosis.

Contraindicated mushroom ryzhik with such gastrointestinal diseases as pancreatitis, cholecystitis, propensity to constipation, insufficient secretion of gastric juice.
