Thinking over the festive menu? A fish steak can be an excellent solution for a formal dinner or a romantic dinner for two. Do not think that this dish is too trivial. Better use lemon juice, soy sauce, spices.

Extra salt is also not the best option. It fires only the top layer of meat, and the middle remains unsalted. But sea salt is the best solution when making steaks.

The following marinade recipe can be taken as a basis and supplemented with its favorite ingredients at its discretion. You will need:

  • Juice of half a lemon;
  • 2 tbsp. L. olive oil;
  • A branch of rosemary;
  • A pinch of sea salt;
  • Seasonings for fish to taste.

Mix the dry ingredients, grind them steaks. Put the fish in the dishes in one layer, tear with the needles of rosemary. Pour lemon juice and olive oil, evenly distributing the liquid. After 15 minutes, turn the steaks over and leave for another 15 minutes. Pickled in this way, you can bake pieces over coals or in the oven, cook in a multivark and a double boiler, and, of course, fry in a pan.

Preparation of steak in a grill pan

Most models of such pans mean the possibility of cooking products without using oil. But many experienced housewives are sure that a small amount of olive oil provides the appearance of a beautiful crust. It is not only pleasant to the taste, but also allows you to "seal" the juices and fat inside the piece, not allowing it to flow. Add about a tablespoon of olive oil before you cook the steak from the fish in the grill pan.

The recipe with the photo gives an opportunity to understand how beautiful the surface of a piece baked on a ribbed frying pan looks. To get the same result, cover the container with the lid for 5-7 minutes and cook over a small fire. During this time the fish is steamed. Then remove the lid and add gas - this will allow you to bake a beautiful crust. If the oil and the expiring grease begin to spray too much, cover the frying pan with a special mesh.

Products in such a frying pan are laid out in one layer or directly on the grate, or first wrapped in foil. In the second case, steaks will be more juicy and softer, in the first one a more pronounced crust will turn out.

You can lay out with the fish on the grate and vegetables: eggplants, carrots, bell peppers, onions. You can serve them with fish as a garnish. The cooking time will be 20-25 minutes on average.

Table feed and dressing

A fish steak is a festive dish. It is worth to choose a worthy addition to it. If you do not have the opportunity to puzzle over the garnish, you can serve even the usual mashed potatoes or boiled rice. A good pasta is also suitable.

An excellent addition can be baked white or green asparagus, pureed broccoli or green peas, grilled vegetables. Serve sauces: tartar, soy, bechamel or white cheesy.

In the summer, you can do without hot. A fish steak can be served with fresh seasonal vegetables and olives. Do not forget about tasty white or rye bread.
