Fish catfish - useful and very tasty fish

Catfish is considered a very tasty fish. Several species are known: eastern wolffish, striped, spotted (mottled). Catfish blue (cyanosis) or widow is found in the Norwegian Sea, occasionally occurs in the Shetland Islands, Greenland, Iceland, on the eastern shore of North America, near the Faroe Islands. Within Russia it is found in the White and Barents seas, and in the Far East.

Fish catfish - sea fish, living at a depth of 40 meters to 200. Adult individuals can reach a length of more than 1 meter and weigh up to 20 kg. The color of the fish is grayish, dark chocolate occurs. It received its name for the characteristic shape of the jaw and teeth: it is a powerful chewing apparatus with curved teeth curved into the inside and protruding, like a wolf, canines adapted to biting two-folded mollusks and crabs. It also feeds on sea urchins, snails, ctenophora and jellyfish. Fish catfish prefers to live in shallow waters, in coastal thickets, in cliff-covered cliffs. The tail and head of the catfish are compressed laterally, the caudal fin is small (less than 1/10 of the total length of the body, not counting the head), a pair of small pectoral fins. Fishing is conducted all year round.

The nutritional value of catfish meat is high. It contains riboflavin, thiamin, pantothenic and nicotinic acids, pyridoxine. It is a source of vitamins such as A, D, B12 and E, contains amino acids: glutamic, aspartic, lysine, etc. The meat of this fish is white, tender, fat and almost boneless. It is easily digested and contains minerals and trace elements that are irreplaceable for man: potassium, sodium, calcium, phosphorus, iron, magnesium, zinc.

Fish catfish is good and in fried form, and in baked, and cooked. A great snack is a catfish cold or hot smoked.

And now some recipes for cooking this wonderful fish.

Catfish in an omelette, with tomatoes :

600 gr of fish fillet cut into pieces, two onions (violet) - half rings, two tomatoes - circles. In a well-oiled form, lay out the fish, onion, tomatoes and pour a mixture of three whipped eggs mixed with one glass of milk. Black pepper ground and salt - to taste. Bake at 200 oC for 20 minutes. Serve the omelette hot.

Catfish baked with rice:

500-700 gr catfish chopped, pepper, salt, pour lemon juice, season with your favorite dry herbs or seasonings (for example - hops-suneli). Allow to stand for an hour and a half to make the meat soaked. Then put the fish in a greased baking dish, on top of it - half (you can whole) a glass of cooked rice. Next, put two carrots in Korean and two onions cut into half rings. Mix three tablespoons of mayonnaise with two tablespoons of sour cream, one tablespoon of ketchup and put the mixture on top. Salt, vegetable oil and ground pepper - to taste. Bake the oven (hot) for 20-25 minutes.

Catfish in foil with vegetables and cheese:

600 gr fillet of catfish salt, pepper and put on foil, on a baking tray. Fry 1 onion, add to it two grated carrots and fry too. Roasted carrots and onions put on the fish, sprinkle on top 100 gr of cheese, grated on a large grater and sent to the oven for baking for 20-30 minutes.

When using foil, you can do without oil, which will make the dish low-calorie.

Fish catfish in almond breading:

Ingredients: 4 pieces of medium fillet of catfish, a teaspoon of salt, ½ tsp of ground black pepper, 1 tablespoon of olive oil, ½ cup of almond flour (you can make it yourself, grind almonds in a coffee grinder or a food processor with a small amount of starch), ¼ A glass of hard cheese (grated), juice of half a lemon, ¼ cup of white breadcrumbs.

Fish fillet pepper, salt, lightly pour lemon juice and olive oil. Set aside for 15 minutes. Mix the cheese, breadcrumbs and almond flour. Roll the fish from both sides in breading, pressing it to the fillet with your hands. Put on a baking sheet covered with oiled foil and put in the oven for 15-20 minutes at 235C. Serve with a slice of lemon.
