'Cheerful pechenka' salad with liver and carrots

Salads are the most simple and affordable dish, which you can fill your guests with plenty and, if desired, pleasantly surprise. Even the most inexperienced housewives are able to prepare original salads for their own taste, because any edible mixture of products, dressed with butter or sauce, can already be called an independent dish. The most common salads from meat, fish, mushrooms and game, but if you want to try something new and more piquant, we advise you to cook liver.

The main feature of the dishes from the liver is its preparation, as tender and juicy pieces, if the time and temperature boundaries are not respected, can be turned into hard and tasteless slices that few will like. Salad with liver and carrots is one of the most simple and useful. A nice addition can be that one and the same salad can be filled with its amazing aroma, choosing to taste duck, pork, chicken, beef or other liver. Now we will consider three recipes, each of which will find the most suitable for yourself.

"Cheerful liver" salad with liver and carrots.

Ingredients:

- 360 g fresh liver

- two large eggs of the highest grade

- two medium to large carrots

- two small salted strong cucumbers

- 30 ml of vegetable light oil

- 110 ml of non-acidic mayonnaise

- a pinch of black and red pepper, salt

Prepare a salad with liver and carrots is easy:

It is necessary to prepare the liver: rinse and clean the veins and films, cut into small blocks, lay out on a hot frying pan with butter, pre-season with salt with a mixture of peppers, cover tightly with a lid and bring it to readiness (do not dry it at all!). Wash and clean the carrot, grate it large and put it in a separate pan, place the onion cut into small pieces into it, make a roast. Boil and cool in running water eggs, cut. Squeeze salted cucumbers and chop, draining excess liquid. Cool the liver and transfer to a prepared container, there also put the rest of the ingredients, pour the sauce and mix thoroughly. Transfer to a salad bowl and decorate with greens.

"Pecholka" salad with liver and beans.

Ingredients:

420 g fresh chicken liver

- a can of large red beans

- 200 g of solid fresh cheese

- a small salad lilac bulb

- 180 g of Chinese cabbage

- mayonnaise and sour cream in the proportion of 50/50

- greens and a couple of cloves of garlic

Salt and red ground pepper

Cooking method:

Clear and boil the liver in salted water (13 minutes), cool and cut into small blocks of medium size. On a large grater grate the hard cheese, divide the onions into halves and chop the thin half rings. Chop the greens, and pour into the blender, there also send a couple of slices of crushed garlic, sour cream and mayonnaise, carefully knock out into a homogeneous mass. Put all the ingredients in a prepared container, pour the resulting dressing and mix. On the table, serve as follows: wash a piece of Peking cabbage and put a salad in the center and insert a toothpick with a triangle of cheese, making a "boat".

Spicy salad with liver and cucumber.

For salad preparation it is possible to take both salted and fresh cucumbers, the first well complement the beef liver, the second - chicken.

Ingredients:

- 350 g fresh beef liver

- 180 g of salted cucumber

- 180 g fresh potatoes

- three large eggs

- can of selected canned peas

- lilac lettuce onion

- 15 ml of uncooked mustard

- mayonnaise for refueling (better olive)

Cooking method:

To make and clean out the liver from the films and veins, cut into small pieces and cook in well-salted water for 19 minutes. We wash the potatoes and cook with the peel so that it does not crumble. Boil the eggs and cut into cubes. Sliced cucumbers cut into medium brusochkami, and onions - in thin petals semirings. We put all the ingredients in one container, fill it with mayonnaise and mustard, mix it and put it into a prepared salad bowl, decorating with greens.

Salads from the liver not only will please lovers of savory snacks, but also those who do not like to eat it as a main dish. Salad with liver and carrots is recommended to give to children to improve digestion and to fill the lack of iron in the body. The main difference of these salads is their rich taste and satiety, which has a beneficial effect on health and raises hemoglobin.
