And all this to the accompaniment of food colors (it is worth remembering the legendary cake "Red Velvet").

In the classic version, Rainbow Cake is a seven crochet, painted in all colors of the rainbow and collected in the appropriate sequence. The whole structure is fastened with a rich cream on the basis of cream cheese, powdered sugar and butter.

In the presence of food dyes and healthy human laziness, an abstract rainbow "Rainbow" appeared. It is a one-piece biscuit that is made from 7 parts of a dyed dough according to the principle of the well-known Zebra cake. Ready biscuit is cut into the desired number of layers, and already in this form is interlaid with cream.

Basic recipe

In order to indicate the field of activity, it is necessary to specify the main recipe by which you can bake a cake "Rainbow":

  • Egg whites - 6 pcs .;
  • Egg yolks - 3 pieces;
  • Sugar - 120 grams;
  • Sugar in proteins - 40 grams;
  • Salt - a pinch;
  • Refined vegetable oil - 100 ml;
  • Flour - 200 grams;
  • Baking powder - 2 tsp;
  • Milk (warm) - 135 ml;
  • Vanillin - pinch;
  • Cheese curd - 700 grams;
  • Powdered sugar - 250 grams;
  • Butter - 230 grams;
  • Vanillin - pinch.

All products must be room temperature.

Sift flour three times with a baking powder. Add sugar (120 grams) and salt. In a separate bowl, mix all the liquid ingredients, except egg whites. Beat to foam. Combine flour with egg, carefully mix. Beat up to hard peaks egg whites with the remaining sugar. Thanks to this, the "Rainbow" cake will acquire additional airiness. Next, you should mix a quarter of the whipped proteins into the dough until smooth. After that add the remaining proteins.

Divide the dough into 7 parts, in each carefully place the dye corresponding to the specific color of the rainbow. Pour the color dough into separate shapes ~ 24 cm in diameter.

Bake at 180 degrees until cooked, which can be checked with a toothpick.

For cream, add cheese, vanillin, sugar powder and butter to a bowl. Beat for 5 minutes until smooth and airy.

Where the colors come from?

The recipe is more complicated than the classical one, so it is worth to break it down into two stages.

Iridescent layers

For their preparation you will need two lists of products, from which cakes will be made separately and colored impregnation to them.

Crust:

  • Flour - 600 grams;
  • Baking powder - 6 teaspoons;
  • Sugar - 350 grams;
  • Salt - 1,5 tsp.
  • Eggs - 6 pieces;
  • Egg whites - 2 pcs .;
  • Butter - 350 grams;
  • Blackberry juice - 75 ml;
  • Blueberry juice - 75 ml;
  • Spinach juice - 75 ml;
  • Carrot juice - 75 ml;
  • Beet juice - 75 ml;
  • A mixture of 2 egg yolks and 50 ml of milk.

Products are designed for a shape 24-26 cm in diameter.

In a large bowl, mix the oil, 150 grams of sugar, flour and salt with a baking powder. Grind to pieces.

Separately mix eggs and proteins with 200 grams of sugar, put on a water bath and warm up until the sugar dissolves. The mass should become so hot that it was not possible to hold a finger in it for a long time. This measure is needed to stabilize the eggs, so that the cake "Rainbow" will be airy. Remove the eggs from the fire and beat for 5 minutes until a firm, lush mass.

Divide the oleaginous and egg masses into 6 parts. For greater accuracy, it is better to do this with kitchen scales.

Now collect the cakes:

  • Mix a part of a flour mix with juice of one kind (or a milk-yolk mixture for a yellow cake);
  • Mix thoroughly until smooth;
  • Add the egg part, gently stir, keeping the dough air;
  • Place it in a mold and bake at a temperature of 180 degrees for 15-20 minutes until it is ready.

Impregnation:

  • Puree of red berries - 150 grams;
  • Puree from orange + finely grated peel - 150 grams;
  • Puree from lemon + finely grated peel - 75 grams;
  • Puree from kiwi - 150 grams;
  • Juice from blueberries + a pinch of soda - 75 grams;
  • Puree from blackberries - 150 grams;
  • Water - 330 grams;
  • Gelatin - 25 grams.

When you see the cake "Rainbow" (photo or live), it always strikes with brightness. To achieve this without harm to health, you need to follow the recommendations presented below.

Add in the juice of blueberries and lemon puree for 75 grams of water. In 180 grams of liquid soak gelatin. As soon as it swells, heat the mass until the gelatin is completely dissolved, not allowing boiling. Refrigerate.

Eat half the gelatinous mass in containers with fruit puree. The cake must be collected in the form.

And what about the cream?

  • The Swiss meringue. Whip 8 proteins in a water bath with 300 grams of sugar to hard peaks. Thanks to heat treatment, the proteins will not be raw and will not flow.
  • Butter cream. Whip 1 liter of cream, add the powdered sugar to taste.
  • Creamy curd cream. Replace 1/3 of cream with soft pasty cottage cheese.
