What is a bruised fungus?

Enough rare for our forests mushroom bruise is difficult to confuse with any other kind. His hat can reach a diameter of twelve centimeters and have both a spherical shape and a pillow-shaped one. It feels like felt to the touch. The pulp of the fungus has a friable structure and white color, with a notch it instantly acquires a bluish tint, for which the mushroom has its name. The hat and leg of the bruise are painted in an intense yellow-straw color. The mushroom foot is hollow and wide.

Mushrooms of this species mainly grow in woodlands on sandy soil. You can meet them under the birches, as well as under chestnuts and oaks. In most of Russia these fungi are very rare, they are listed in the Red Book. Season of growth of the bruise begins in July and ends in September.

As a rule, an inexperienced mushroom picker can confuse a bruise with a chestnut hygrophor, which is very similar to him externally. To determine the same difference can easily be done by making a cut on the plant: if it immediately acquires a blue shade, then you have a bruise. If it remains yellowish-white, it is most likely a hygropore.

Mushroom bruise is edible and has a great taste. It can be consumed in dried, marinated or fried form.

How to cook a mushroom bruise?

There are many ways to prepare this variety of forest products. Almost any recipe for cooking other types of mushrooms is suitable for bruising. They can be fried, dried, marinated, canned, and used for cooking caviar.

Mushroom bruise: recipe for caviar

This dish is very tasty and easy to prepare. As ingredients, we need three hundred grams of mushrooms, onions - two heads, vegetable oil, garlic, pepper and salt to taste. Onions are cut into small cubes and fried in oil until golden brown. Mushrooms finely chopped and added to the onions, this mass must be stewed for 7-10 minutes.

For a couple of minutes until ready for onions and mushrooms, crushed garlic, pepper and salt is added. Delicious mushroom caviar is ready!

Recipe for fried bruised mushrooms with nuts

To cook this dish, you need half a kilo of fresh mushrooms, a glass of peeled walnuts, onions - two pieces, a few green onion feathers, 80 grams of butter, coriander, parsley, apple cider vinegar, ground pepper and salt to taste. Washed and peeled mushrooms must be cut into slices, add salt and fry together with finely chopped onions. During the frying, the mushrooms will give off the juice, which must be drained and add a little apple cider vinegar and pepper to it. The resulting mixture should be filled with fried mushrooms, add finely chopped parsley, cilantro and onions, as well as chopped walnuts. Mix everything well and allow to cool. When serving the table, place the mushrooms on a slide and decorate the dish with green sprigs. Of course, fry bruises can be and without adding various spices, herbs and nuts, however this dish will not have such a memorable and unique taste.
