How to make crackers on your own: a recipe at home

Crackers are a universal snack. They can be eaten both in a pure form, and served on a table with meat, butter or various fillings. For example, with creamy soft cheese and salted salmon or smoked salmon. In fact, there is nothing difficult in preparing crackers. Recipe (at home) does not require much experience in cooking.

The tools that will be needed for this are minimal: a good rolling pin, parchment paper, plastic packaging, a spacious work surface, a good baking tray and a sharp knife.

Crackers, a recipe at home which is easy to implement, can be very simple in composition. You can take just flour, water and salt. You'll get flat cakes similar to matzos, which you can use for sandwiches. If you add leavening agent and butter to this dough, the consistency of the finished product will become more gentle.

As flavorings, various nuts, seeds and spices are traditionally added: toasted almonds, poppy seeds, sesame, fennel and cumin. You can use a variety of exotic seasonings, which combine salty dough.

Advice

  • Do not knead the dough too much. It is better to minimize this process so as not to activate gluten in flour.
  • When using a rolling pin, move from the center of the dough and roll it about 0.5 cm thick. If the crackers are thinner, they will turn out to be very hard. If the thickness is excessive, they may not be baked in the middle.
  • If the dough starts to shrink (this means that the gluten is too active), leave it for five minutes, without covering it, and then continue rolling.
  • If you want to prepare a figured cracker - fish, leaves, etc., you will need special shapes. If desired, the figures can be cut out on the rolled up test by hand with a very sharp knife. To obtain even geometric shapes, it is most convenient to use a pizza cutter.

  • After these crackers are removed from the oven, transfer them to a dish or spill for cooling. In order for their surface to turn crispy, you need air circulation from all sides.
  • Salty dough for crackers can be left in the refrigerator and stored for several days or freeze it for up to a month. Such a preparation can save your time considerably if baking is needed urgently.

What kind of fillers can I use crackers?

  • Mix the thick yogurt with cucumber, mint and lemon zest.
  • Take a cream cheese like "Philadelphia" and mix it with chopped dill and green onion. You can add finely chopped fillet of smoked salmon.
  • Fry chicken liver in oil with herbs of your choice, finely chop. Add the crushed apple and a few drops of cognac into it.

Crackers with rosemary

Ingredients:

  • ¾ cup of flour;

Crackers rye in Swedish

Ingredients:

  • 1 cup of dark rye flour;
  • 1 cup of wheat flour;
  • 1 teaspoon (tea) of baking powder;
  • 1 teaspoon of sea salt;
  • ½ tablespoon (tea) seeds of cumin;
  • 2 tablespoons of chilled butter, cut into small cubes;
  • ½ cup whole milk;
  • 1 tablespoon of treacle;
  • 1 egg, broken with 1 tablespoon of water;
  • 2 tablespoons (tea) caraway seeds fresh.

How to cook Swedish crackers

Heat the oven to 180 degrees. Cover two baking trays with parchment paper or silicone rugs for baking.

In a food processor or large capacity, mix the flour, salt, baking powder and ground cumin, whisk well until the ingredients are completely combined. Add butter and whisk at high speed until it completely dissolves.

Mix the milk and molasses, stir until completely dissolved. Gradually add this mixture to the dough and whip with a mixer or stir with a spatula or spoon (wooden).

On a flour-poured table or other surface, knead the dough until a homogeneous mass is obtained. It will be a little sticky. You can add flour as needed. Divide the dough into two balls, cover with plastic wrap and leave it for 30 minutes.
