What if the cucumber has outgrown? Billets for the winter

Owners of cottage and garden areas always have many problems: cucumbers have outgrown or fog has ruined the harvest of tomatoes. But there are no desperate situations , and each product can always be used.

Cucumbers in cucumbers

Every gardener knows that the beds need constant care. Plants need to be watered and periodically choose already ripened fruits. If you do not, then one day you can see a picture: tomatoes darkened, wilted cabbage, and cucumbers outgrew. Of course, a miserable sight. But even then, do not lose heart. Any product can be found worthy of use. There are a lot of ways that you can save or store for future even very overripe copies. For example, if indeed cucumbers have outgrown, then it is better to conserve them in their own juice. To do this, you will need: 5 large overripe fruits, 0.5 cups of peeled garlic cloves and horseradish root.

The work takes place in several stages:

  1. First overgrown cucumbers must be peeled off, and then grind them into gruel with a meat grinder.
  2. Do the same with garlic and horseradish.
  3. Products are combined together, add salt and mix well.
  4. Put a vegetable mass on the bottom of the sterilized cans.
  5. Then place the cucumbers smaller. If necessary, they can be cut into pieces.
  6. Fill the space with the remaining cucumber mixture and cover with a plastic lid.

Store these vegetables better in the basement. Cucumbers taste very similar to cask.

Canned semi-finished products

Of course, no one wants the cucumbers to outgrow the beds. But if it did, then do not be upset. In the farm everything will come in handy. Of pot-bellied yellows, by the way, it can turn out to be an excellent addition for rassolnik. Why in vain translate young crispy cucumbers? It is better to use for this ungainly overgrown. For such blanks you will need:

  • Kilograms of large cucumbers,
  • 25 grams of salt,
  • Head of garlic,
  • Half a teaspoon of lemon,
  • 200 grams of carrots and onions,
  • 50 grams of tarragon.

Preparation takes very little time:

  1. Cucumbers to wash, remove from them the peel, and cut the flesh into small cubes or straws.
  2. In the same way, treat the carrots.
  3. Onion and garlic chop as small as possible.
  4. Collect the products in a deep saucepan. Add salt, citric acid and leave for an hour.
  5. After that, the mass is warmed on the plate for 15 minutes.
  6. Transfer the hot mixture into cans and cork.

Such a product can be an excellent basis for vegetable sauces or a variety of soups.

Vegetable stew

If the farm has overgrown cucumbers, recipes can come up with the most unexpected. After all, in skilled hands, any products can turn into a real yummy. Take, for example, a salad, which will require:

  • carrot,
  • Bell pepper,
  • bow,
  • Tomatoes,
  • Cucumbers,
  • greenery,
  • vegetable oil,
  • Salt and a little ground pepper.

Cooking process:

  1. Cut the large cucumbers along in half and remove all the seeds, and then cut the cubes. Shred the fried product in oil in a deep frying pan.
  2. The remaining vegetables, too, cut into small pieces and add to cucumbers. Stew is necessary until each of the products is completely ready.
  3. The hot mixture is packed in cans and rolled up.

After cooling, they can be stored even at room temperature. To the taste of no one even says that it is overgrown cucumbers. Recipes will differ only in the composition of the original components. To the table, this dish can be served in two ways. In the cold form it is a juicy vegetable salad. If the mixture is heated, it turns out a wonderful side dish.

Interesting options

Mistresses often have to make blanks from overgrown cucumbers. After all, nature surprises are hard to predict. So we have to look for a way out. For example, make a salad in Korean manner. It's very simple, if you have at hand:

  • 3 kilograms of cucumbers,
  • For 1 kilogram of carrots and sweet peppers,
  • 3 large heads of garlic,
  • Half a kilogram of onions,
  • 60 grams of salt,
  • 125 grams of sugar,
  • A quarter kilogram of burning adzhika,
  • 120 grams of vinegar,
  • Half a cup of vegetable oil.

To prepare such a dish you need to strictly follow the steps:

  1. First with cucumbers cut the peel. Then knife them into two parts and gently remove the core with the seeds. The remaining "boats" cut into thin strips.
  2. In the same way do with peppers.
  3. Cut the onions into half rings, let the garlic pass through the crush, and grind the carrots on a special grater.
  4. Connect the products, add the rest of the ingredients, a glass of cold water and leave for two hours.
  5. Then spread the mixture over the jars and sterilize in a water bath for 15 minutes.
  6. At the last stage, billets from overgrown cucumbers must be rolled.

Cucumber roe

People often, not knowing what to make of overgrown cucumbers, just throw them out. But such waste is absolutely not justified. In skilled hands such a product can be transformed simply beyond recognition. There is a recipe on which you can prepare the original dish, and no one will distinguish it from the famous caviar. It will take several basic products:

  • Kilograms of cucumbers,
  • 2 cloves of garlic,
  • bulb,
  • One and a half teaspoons of ground paprika,
  • 1 carrot,
  • For ½ teaspoon of sugar and apple cider vinegar,
  • salt,
  • 50 grams of vegetable oil.

Caviar is prepared quickly:

  1. Cucumbers clean, and then remove from them all the seeds. They will only spoil the taste. Grind the remaining flesh using a large grater.
  2. On the same grater chop the carrots, and then finely chop the onions with a knife. Both vegetables for 15 minutes fry in oil.
  3. Cucumber mass squeeze, and then add to the pan. Mass with constant stirring to simmer for another 40 minutes.
  4. 10 minutes before the end, enter the remaining components.
  5. The resulting mixture is transferred to a blender and turned into a homogeneous mass.

Now it can be used as a snack or slightly warmed, and then rolled into prepared banks.

Salted "giants"

Large overgrown cucumbers somehow not salted. Have not yet come up with such banks. But not all so unambiguously. Pickling overgrown cucumbers is a separate issue, which needs to be given special attention. It is clear that they will not fit entirely into banks. Therefore, it is better to make original rolls of them. Ingredients will require the most common:

  • 1 kilogram of huge cucumbers,
  • Half a liter of water,
  • Head of garlic,
  • 3 tablespoons apple cider vinegar,
  • 20 leaves of currant,
  • salt,
  • Greens (50 grams of dill and 20 grams of tarragon).

To cook this dish is very interesting:

  1. First, the cucumbers must be freed from the hard skin, and the remainder cut into thin plates.
  2. Grind the greens with garlic.
  3. At the bottom of a large tableware alternately lay the layers of cucumbers and garlic with chopped herbs. The structure should be carefully covered with currant leaves and poured with salt solution.
  4. Top put the plate and set the oppression.
  5. The building is put in the refrigerator for 24 hours.
  6. The next day you can start pickling. To do this, first put the currant leaves on the very bottom of each jar.
  7. Cucumbers with greens roll up in the form of rolls.
  8. Tightly put them in jars.
  9. Brine drain, boil, and then fill with hot liquid all free space.

It is better to store such preservations in a cool place under nylon caps. With boiled potatoes, these rolls are simply lovely.
