It has a sour taste and is very well combined with sugar. Recently, for the preparation of some components of the cake use cream fresh. What is it and where is it used?

Fresh cream is a sour-milk product that contains at least 30 percent fat. It is similar in its consistency to sour cream. It is made from cow's milk. In its composition, the presence of sucrose is possible (no more than 15%).
Fresh cream has a rather pleasant taste, which has a slight sourness. Sometimes it is possible to note a nutty taste. He's pretty gentle. Used to make soups, sauces. Also it is added to the cream confectionery.
A characteristic feature of this product is that it does not form flakes when added to hot dishes. It is sold in kind, as well as with various ingredients. For example, it can be added garlic, greens or various spices. Sometimes it is mixed with gelatin.

Having decided what is the cream-fresh, you can go to the recipes in which it is used. Consider the options for its use in the preparation of creams.
Prepare a berry cake or pie, using a fresh cream. For the test, we need 115 grams of butter, 150 grams of sugar, three chicken eggs, 200 grams of good flour, a little salt and half a spoonful of tea vanilla.

Butter should be soft, so you must first get it from the refrigerator. We beat it with salt and sugar until the mass becomes very lush and looks like a cream. Then we drive the eggs one at a time, continuing the whipping process. Add vanillin. Preliminary it is necessary to sift the flour (this makes baking more airy). Then pour it gradually into the dough. Everything is mixed with great care.

We take the desired shape and lubricate it with butter. We put into it the cooked dough and we form the skirts with the help of a confectionery scoop.
Now we need to make a cream. To do this, take 200 grams of fresh cream (you can more), 50 grams of sugar, fresh or frozen cherry berries (they must pre-thaw), one chicken egg, brown sugar (2 tablespoons) and powdered sugar for decoration. Take sugar, egg and fresh cream and whisk them well. Then pour this mixture on top of the dough. The next layer is laid cherries. Top with brown sugar.

The cake is baked in the oven for one hour, setting the temperature at about 180 degrees. By this time the cake should get the color of gold, and the cream should thicken. On top of the cake you need to sprinkle powdered sugar. Serve it should be in a cold. It turns out a very delicate dish. A light acid, which is given to it by cherry berries, is supplemented by a very gentle cream.

If you did not find ready-made cream fresh in the store, it should be cooked at home. To do this, take 500 ml of very fat cream (35%) and 4 tablespoons of yogurt without any additives. Yogurt can be replaced with yogurt. Mix these two ingredients and leave at room temperature for about a day. Cream should thicken. After that, we remove the ready-made cream fresh in the refrigerator. We use it for the purpose as necessary.

If you need a smaller amount of this product, then reduce all the ingredients in the right proportions.

The decoration of cakes with cream is not only beautiful, but also delicious. If you add a variety of fruits, a special zest appears in the product. Fresh cream can be used as a layer.
