Half a kilogram of chicken stomach requires as much chicken liver, three hundred grams of buckwheat, half a kilo of onion, carrot and celery root, a red onion and a couple of celery stalks, a half glass of white dry wine and a glass of cognac, olive oil and a little creamy. How to cook

The oven needs to be heated up to two hundred degrees. Prepare the dishes: the best is cast iron, which your great-grandmother put in the Russian oven, but the cauldron, and any tall frying pan or saucepan with a thick bottom, will do. Chicken stomach rinse, if necessary - clean from the remains of a coarse film, dry. Now all the roots are cleaned and cut into small cubes. Stems of celery, too, cut less. That's all at this stage. You can start cooking. First, you will need a hob, an oven - a little later.

Stage One

Melt a couple of spoons of butter in the chosen dishes, pour in three spoons of olive, fry the roots and all the spices until the transparency of the onions - about five to seven minutes. Add chicken stomach, salt. Mix all this with wine, add the fire to the strongest and give the alcohol to the steam. Now you need an oven. Filled with hot chicken broth or boiling water of the stomach cover with a lid and bring to the oven for about an hour and a half until it becomes soft. Rinse buckwheat on top of offal, top up with boiling water, close tightly and send back to the oven for twenty minutes. Now turn off the oven, but do not open the pan / cauldron.

Onions, which are red, cut into half rings. Now you need a frying pan heated on fire. Pour in three spoons of olive oil, mix onion, add chicken liver and cognac. Five minutes to fry, turning over. In no case longer. Now put the liver over the buckwheat, again close tightly and bring to the full readiness in the same oven switched off for another half an hour at least. Then serve! Guests will be delighted.


Fritters with offal and onion

For half a kilogram of beef liver take two onions, two eggs, two tablespoons of sour cream, two tablespoons of flour, salt, black pepper - better freshly ground, vegetable oil.

Preparatory stage

Liver and onion to pass through a meat grinder, add sour cream, eggs, salt, pepper, mix thoroughly, then gradually combine with flour. The mass should be slightly thicker than for simple fritters, homogeneous.

The main process

This recipe is a pancake fritters with onions and semolina. It takes a half a kilogram of any liver, a large onion, five tablespoons of semolina, three eggs, pepper and salt to taste. Vegetable oil for frying.

Pancakes from by-products with onion always begin in the same way: you have to pass both through a meat grinder or grind in a blender. Then the remaining products are added. Fritters from offal with onions and rice

It will take a half kilogram of chicken liver half a glass of raw rice, egg, onion, salt, if desired, pepper black, three tablespoons of flour, vegetable oil.

Preparation
