Unusual risotto with mushrooms

Risotto today can be tasted not only in an Italian restaurant, but also at home. Especially if the hostess prepares this dish, using recipes.

Classic mushroom risotto

Always to prepare this Italian dish you only need to take rice called arborio. In this recipe, it is also used. Half a kilogram is required. Mushrooms need 400 g (if you take the dried, then much less). The best for the risotto is suitable for the white mushrooms. The recipe also presupposes the onion head, 3 cloves of garlic, olive and butter, a bunch of parsley, and Parmesan cheese (about 150 g), which the Italians love.

The mushrooms are finely chopped and boiled in water. They must be salted. After the preparation of mushrooms, the broth should be left, it will be needed later. Onions are minced very finely and fried in olive oil. Add the garlic and then the mushrooms. All this is fried on high heat. Parsley also pours out on the pan. The whole mixture is immediately salted almost at the end of cooking.

Boil rice correctly for risotto - it's very important. He is laid out on a frying pan and fried in butter until the croup is clear. Only then there must be gradually poured the mushroom broth, each time stirring rice. When the rice is semi-ready, mushrooms are added to it, and broth should be continued anyway. Once the rice is cooked, freshly chopped parsley and half of the cheese are placed on top. The remains of grated cheese are added to each plate individually.

Pumpkin risotto with mushrooms

For many, there is an acute question, how to cook risotto. After all, this "incomprehensible" dish has become so popular all over the world. In fact, everything is very simple. And there are even very unusual recipes for its preparation. For one of these you will need to take 200 g of pumpkin, 100 grams of rice, green onion, champignons, 2 small spoons of oil (certainly olive), rosemary, cheese.

Onion, mushrooms and pumpkin cut into small squares. The pumpkin is stewed in the water on fire until it becomes completely soft. Onions are sauted in oil. All the rice is added here, which is fried until golden in color with the onion. Then it is poured in water and stewed until ready. Then the champignons are added to the rice, and the mixture is extinguished again, but before the mushrooms are ready. Top spread the pumpkin and again put it out under the lid.

It turns out very tasty and useful. And to submit risotto with mushrooms it is necessary, necessarily having decorated with a rosemary and grated cheese.

Risotto with mushrooms and peas

A delicate taste is obtained in a mushroom risotto, if you add there a useful green peas. For the implementation of this dish you need rice (200 g), as many mushrooms, half a glass of green peas (can be any: fresh, frozen or even canned), a bulb, half a glass of wine (white and dry), butter (preferably olive).

In a frying pan deeper mashed potatoes and onion, adding a little water and a little oil. Almost immediately, green peas and spices are poured here (you can add thyme or laurushka).

Only after all these manipulations rice and wine are added. Do not wash rice in advance. Otherwise, all the starch that makes the risotto so creamy-tender, just washed away. As soon as the wine evaporates, you can add water. Once the rice is ready, a small spoonful of butter can be added to the dish. And now, the Italian dish is ready to serve. True, you can first decorate it, for example, with greens.
