Hepatic roll and various recipes for its preparation

Hepatic roll is considered a dish more festive, rather than everyday. You can prepare it according to a variety of recipes, which differ in the list of additional ingredients. However, the main element is pate from the liver, which gives the dish a special flavor.

Hepatic roll: recipe with oil

Liver and butter to taste perfectly combined with each other. As a result of this "commonwealth", a satisfying, useful and beautiful snack is obtained, which you can use with bread as a sandwich or as yourself a dish. To do this, however, it is better with fresh vegetables and herbs to "reduce" the excessive fat content and calorie content of the pate.

To make a liver roll with butter, you will need these products:

  • Pork liver - 1 kg;
  • Butter - a pack of 200 g;
  • Yolks boiled - 8 pieces;
  • Onions, carrots - 1 piece;
  • Lard pork - 300 g;
  • Pepper ground black and salt - all to taste.

How to cook liver and liver rolls

For the beginning it is cut up fat together with a skin on small square pieces. Then you need to thoroughly wash the liver, after which it must be dried using paper towels. Cut the liver in the same pieces as bacon. On a well heated pan, you first need to put the fat to fry it. The liver needs to be added when a decent amount of fat is drowned from the fat. Now everything must be mixed and fried in medium-power fire.

Vegetables - carrots and onions - cleaned, cut into cubes and rings. The liver, when it brightens, it is necessary to sprinkle with salt and pepper, add the sliced vegetables to it, mix, close the lid and cook in this position. Periodically, the lid should be raised to stir the cooking dish. When everything is ready, the frying pan needs to be opened and the liver allowed to cool.

While the dish is cooling, you need to boil the eggs, take the yolks out of them, and leave the proteins. Now the liver along with the vegetables and bacon need to pass through the meat grinder. The resulting minced meat should be crushed with a spoon to give it smoothness and elasticity. It may happen that the forcemeat turns dryish. Then it should be sprinkled with the juice left after roasting the liver. It is necessary to do this, as the pate should be moist.

At this time, the yolks should be rubbed through a sieve, which will give the bulk weight, in which you need to add butter. These ingredients must be rubbed together with a tablespoon. Next, you need to spread the food foil on a clean table, to lay on it the liver paste in a smooth, uniform and thin layer. To level the surface, you can use a rolling pin, only without pressure. After this work on the liver layer, lay the yolk layer, spreading it over the entire area of the pate. Without difficulties, this can be done if you apply a tablespoon, previously dropped into boiling water and dried afterwards wiped.

The next step is the forming of the roll from the resulting billet. Doing this is not so simple, it takes a little patience and skill. So, with both hands should turn the pate, and the foil is separated from it as the roll is rolled. In this way, the whole pate is wrapped.

The product is large, so it can immediately be divided into two parts. Now rolls need to be wrapped in foil and send them to the refrigerator for about eight hours. After that, the roll is ready for consumption, it is cut well into portions, which look nice thanks to the yellow filling.

Roll with cheese filling

To make a liver roll with cheese, the following ingredients will be needed:

  • Dutch cheese - 100 g;
  • Boiled egg whites - 4 pcs .;
  • Chicken liver - 250 g;
  • Boiled proteins - 4 pcs .;
  • Onion - 1 head;
  • Mayonnaise - 80 g;
  • Gelatine - 20 g;
  • Spices, oil for roasting.

And now tell you, cook a liver roll with cheese stuffing.

Cut onion and liver, send together to a frying pan for extinguishing. Cook until the pieces of onion become soft. Now the liver, onions and boiled squirrels are sent to the blender for mixing. Before that, you should add salt and spices to your taste.

Prepared cheese should be grated on a large grater, then mixed with mayonnaise and boiled yolks. Mix thoroughly so that a uniform plastic mass is obtained.

Gelatine should be diluted in 40 ml of water. Then it should be placed in a microwave to bring to a boil, then divide the mixture into two portions. Now each of them should be added separately to the cheese and liver mass, while stirring intensively.

On a clean table, you need to spread the food film, on which the cheese mass is first laid, and then on top of it - the hepatic. Now it is necessary to form a roll that needs to be sent to the refrigerator for cooling for several hours. After that, the roll can be eaten.

The following ingredients will be required for this roll:

  • Liver of beef - 700 g;
  • Cream-curd cheese "Almette" - 200-250 g;
  • Mayonnaise or natural yogurt - 40-50 g;
  • Korean carrots - 300 g;
  • Eggs boiled - 4 pcs .;
  • Greens, salt, spices - to taste.

How to cook a liver roll with carrots

  1. Boil the liver in water until completely ready, pass through the meat grinder a couple of times. Ready ground meat salt and pepper.
  2. Add the cheese to it, stir intensively.
  3. Stuff the meat on a foil in the form of a rectangular shape.
  4. Carrot milled in a blender, mixed with mayonnaise. Lay the mixture over the hepatic layer.
  5. Boiled eggs finely chopped, mixed with mayonnaise and put on top of the carrot layer.
  6. On the perimeter of the pate sprinkle with herbs and roll it into a roll. Packaged in foil product sent to the refrigerator for a couple of hours. After that, the liver roll can be eaten.
