To turn ordinary tomatoes into a very tasty tomato sauce at home, it is not necessary to be a chef or a technologist, but just follow the directions that will be given below. Almost any mistress can cook not only a tasty, but also useful sauce from tomatoes.

First of all, if you do not have a garden, on which tomatoes grow, then they need to be purchased on the market. Select only mature fruits without any defects and relatively small sizes. So, let's start our important and very necessary business by cutting tomatoes from various defects, if any, and the peduncles, of course, after washing well the vegetables. Then it is necessary to cut tomatoes every four, and if very large, then in five parts. We cut the tomatoes through a juicer or, if there is not one, then it is possible and through a meat grinder. But only then it will be necessary to further rub the mass through a colander, in order to clear it of seeds and skins.

When this work is done, proceed to boil our tomato paste. To do this, put it in a saucepan and, putting on gas, turn on a small fire. The process of boiling takes a long time, but it's worth it, because as a result you will get a stunningly tasty tomato sauce. We boil the mass until it is half full. It is necessary to stir the tomato paste, otherwise it will burn to the bottom and all efforts to prepare will be in vain. Although it's all "on the fan", as there are people who prefer slightly burnt tomato paste, and for such connoisseurs of extravagant food there is a special tomato sauce, the recipe of which takes into account their taste preferences.

So, back to our recipe. It is advisable not to cover the pan with a lid, as in this case the water from the tomato will evaporate faster. While the mixture is boiled, it is necessary to perform a number of other actions, namely, to purify the necessary amount of garlic, passing it through the garlick, and carefully grind with salt. If you do not really like garlic, do not worry, in tomato sauce its taste will not be pronounced, but it will add an exceptional taste and add spice to it. Of course, the norm of garlic can be adjusted depending on your addiction to it. Next, in a saucepan with boiling mass, spread the garlic, salt, sugar and various spices such as black pepper, cloves and others. After adding the above ingredients, you need to add a little more vinegar and let it simmer for 10-15 minutes, then remove it from the fire.

That's all the work to prepare the sauce, and then as you like - or pour it over the banks and roll for the winter, or let it cool down and put in the refrigerator for daily use.
