Tasty and simple: recipes of lenten pies

Pies and cakes since ancient times glorified Russia. Pies, kurniki, lazy pies and kulebyaki were an integral part of any festive feast. And now it's hard to imagine a family Sunday lunch without any baking. Remember at least a common Russian proverb: "the cottage is not red with corners, but is red with pies".

Of course, all this is tasty and satisfying, but, unfortunately, is not at all useful. And what about those who are completely limited in the possibilities of consuming muffin because of excessive weight, diseases of the digestive tract or, for example, in the conditions of the Orthodox fast, when you realize that you can not, but you want to treat yourself to an appetizing, plump pie?

We offer an alternative - recipes for lean patties. All this is a full-bodied, delicious pastry, but at the same time it is practically dietary, as when it is made only lean products are used, which means that the heavy impact on the body of animal fats and harmful cholesterol decreases.

So, the first recipe is chebureks with cabbage.

Dough: a glass of water, half a teaspoon of salt, 350 g of flour.

Make the dough as a dumplings, but that it is not too steep.

Filling: cabbage and onions finely chopped, carrots rub on a coarse grater. Salting, stirring and stewing in a pan, with the addition of vegetable oil, until cooked. Cool down.

Dough cut into equal parts and roll out of them thin burrs.

On one side of each bake to lay out the filling, cover the other side and pat.

Fry on warmed vegetable oil until desired ruddy brown.

In the filling, you can also add mushrooms or pickled cucumbers. These are simple, at first glance, recipes for lean patties can be used for dietary baking. And if you want a sweetie, then instead of cabbage you can use apple jam or any, sufficiently thick jam.

The next recipe is Kystybai. It is Kazakh, and according to other sources it is also a Tatar dish, and it is called in all different ways, which, however, does not matter at all, because this culinary masterpiece can be eaten by representatives of any culture and nationality. The main thing is that the taste of baking is excellent, despite the ease of preparation and availability of the ingredients used. And anyway, any recipes of lenten pasties have simply excellent taste.

Dough: in a glass of warm water, dissolve half a teaspoon of salt, add a large spoonful of vegetable oil, two glasses of flour, and knead the dough.

Filling: peel and cook 1 kg of potatoes. A couple of bulbs finely chopped and put out until soft on vegetable oil. Peel the potatoes in a homogeneous puree, pouring, if necessary, a potato broth, but that it does not become too liquid. Add onions, and, if desired, spices for potatoes, mix.

Cut the dough into approximately equal balls, roll them into thin buns and bake in a dry frying pan. Ready cakes spread in a pile, covering with a towel so that they do not become stiff and do not break.

Now for one half of the finished pancake, put the mashed potatoes and close the second half. Immediately submit to the table.

By the way, the stuffing for kytybaya can be made from rice with pumpkin, and from pyshenki with raisins. A very delicious recipe for pies with fish, which are also prepared by Kazakh households. And if you stuff kystyrbai with pumpkin puree with dried apricots and dates, you will get a wonderful variety of dessert.

Well, and finally, the recipe for a wonderful carrot pie, not only useful, but deliciously delicious.

A glass of raw, grated carrots, mixed with a glass of sugar, add a little cocoa powder, 2 tbsp. Vegetable oil. In 1 tbsp. Lemon juice pour 1 tsp soda, stir and pour into the dough. Add a glass of flour, knead well and put in a greased form. Put in a preheated oven for half an hour at a temperature of 200C.

Ready cake sprinkled with grated bitter chocolate and any crushed nuts.
