After all, this dish is a simple and delicate vegetable dinner, which is done in only an hour and a half and does not require a lot of expensive and outlandish products. Eggplant baked in the oven: detailed recipe

Necessary ingredients:

  • Chicken fillet - 300 g;
  • Champignons - 160 g;
  • Small bulbs - 2 pcs;
  • Cheese of hard varieties - 100 g;
  • Fresh greens - a large bunch;
  • Eggplant young - 3 pcs;
  • Low fat mayonnaise - 120 g;
  • Salt, aromatic seasonings, red pepper - for personal taste and discretion;
  • Tomatoes red ripe - 3 pcs;
  • Sunflower oil - 65 ml (for roasting).

Process of preparation of a stuffing

"Bolettes" from eggplants are baked in the oven very quickly. Therefore, it is better for them to prepare the stuffing, which does not require long heat treatment. For this, we decided to use chicken fillet. It should be taken in an amount of 300 grams, carefully washed, separated from bones and skin, and then finely chopped together with processed mushrooms.

To "boats" of eggplants with mushrooms turned out to be more aromatic, it is recommended to pre-fry the stuffing on a gas stove. To do this, warm up the saucepan, pour in the oil (sunflower) and put pieces of chicken fillet with champignons and chopped onions. Then the products need to be well fried, and also generously sprinkled with salt, pepper, herbs and aromatic seasonings.

The process of processing vegetables

"Boat" of eggplant is preferably made of small and young vegetables that have a soft skin. They need to be washed well, cut off the navels and stems, and then divided along the half and take out the core. As a result of such actions, you should get several "boats" with thin walls. It is also required to wash the red tomatoes separately and cut them into circles (if the tomatoes are large, then on the semicircles).

Forming a dish

When all the components of the dish are ready, you should begin to form it. To do this, put the eggplant "boats" on the baking sheet, and then fill them with previously roasted stuffing from chicken fillet, onion and champignons. Next, the ingredients should be covered with a thick layer of mayonnaise. To make the dinner more juicy, it also needs to add fresh tomato slices and grated hard cheese.

Heat treatment

"Boat" from the eggplant should be baked in the oven for about 35 minutes. This time is enough for the vegetables to become soft, and the cheese melts, forming an appetizing cap.
