Stewed pike: a selection of recipes

Long since the pike was considered a delicacy. It's not easy to work with this fish, but its meat is very tasty, so the cooks treat this fish with great respect. To get a good result, you'll have to try, but the fragrant stewed pike will be a perfect reward for the effort.

Fish preparation

If you plan to buy fish in the store, you can immediately choose a fillet. This will save you from many labors. But if you got a real princess of rivers in all its glory, and even with a steady smell of mud in addition, prepare for the upcoming works.

Separate the head along the branchial arches. By the way, it does not have to be thrown away - it's a good base for an ears. If you plan to use the pike head later, be sure to remove the gills from it and then send it to freeze.

You can cook stew pike right along with the skin, but if you do not like it, it will not be difficult to get rid of it. It is removed, as a stocking, if you pull from head to tail.

Remove the ridge by cutting the fillet from both sides. Large bones are removed easily, and for small ones one must chase with a fork. Very useful in the work and the usual cosmetic tweezers.

The stewed pike will be much more tender if you pre-soak the salted fillet in milk. This completely neutralizes the smell of the swamp.

Pike with mushrooms

Expressive taste of this fish is perfectly combined with mushrooms. You can use even ordinary oyster mushrooms and champignons from the store. A stewed pike with porcini mushrooms will become a real delicacy, worthy of the most solemn table - for example, Easter or New Year's.

The proportions of the products can be adjusted depending on the taste and available quantity of fungi. Usually fish fillets take twice as much as other components.

Cut the pike into pieces, lightly rub with flour, fry on both sides in butter. Fold in a saucepan and pour with vegetable, mushroom or fish broth to cover the pieces. Put the stew out. Add fried mushrooms 10 minutes before cooked. If desired, finely chopped chopped onions can be added to the sauce.

Fish in dairy sauce

This dish can be served both hot and cold. Pike stew with onions in milk is prepared for a long time, but the result will exceed your expectations.

For cooking, a cast-iron frying pan with a lid is perfect. In a small amount of oil on high heat, quickly fry the meat cut into large pieces - this is necessary so that it does not break up during the extinguishing. Add finely chopped raw onion (2 pcs per kilo fillet). Fill with milk (700 g). Put on a slow fire, closing the lid. The fish will be stewed for at least 1.5 hours. Do not forget to look at her, and as you boil the milk, pour it. In total, you will take at least a liter of liquid. At the very end of quenching, add 100 g of butter, black pepper and salt. In a cold form, this dish looks like a jellied.

Pike in sour cream

Now it is difficult to say how long this version of the recipe appeared. But still in princely Russia pike stew in sour cream was considered a classic.

On a kilo of fillet you will need 3 bulbs, a little oil, 2/3 of the st. Sour cream and seasoning to taste.

Mix black pepper and salt, generously sprinkle pieces of fillet. Fry them in a heated frying pan for 5 minutes on each side. Because of the salt, they immediately start the juice and do not stick to the bottom. Then, load onions, chopped onions with semirings or straws. Pour the sour cream, cover and simmer for about half an hour.

Pike with vegetables

This recipe is sure to appreciate the lovers of tomato gravy. You can cook on it not only fillets, but also ordinary pieces (with the spine and ribs).

Roll in pieces of fish with a total weight of about 1 kg, fold in a frying pan and fry until ready. Transfer to the saucepan.

Grated on a grater (large) one carrot and the onions chopped on a fry, fry in the remaining oil until soft. Return the fish to the frying pan, season, add salt and add 3-4 spoons of tomato paste. Pour 0.5 tbsp. Broth or water. Cover and simmer over medium heat for about 20 minutes.

Pike stew with carrots and onions is good not only at home. This is also a great idea for a summer cottage and picnic. And if you cook a dish in the season of vegetables, you can add greens and bell peppers to taste.

Garnish for pike

Usually, stewed pike is served with boiled potatoes or mashed potatoes, boiled with crumbly rice. Stewed cabbage is good as a garnish. If you made a pike in sauce or with gravy, you can serve pasta, shells or spaghetti.
