Puff pastry pies with meat

Pies with a variety of fillings - this is a traditional dish of Russian cuisine. Patties can be snack foods, they are served to broth or soup and, of course, this is an excellent addition to the tea table.

Patties are divided according to the method of preparation and the type of dough. As a rule, they are either baked in the oven or fried in a frying pan in vegetable oil. The same test for pies can be very different - yeast, butter, sand or puff.

Classic puff pastry is made from flour, water, salt and butter or margarine. Preparation of the classic recipe takes a long time, because the semi-finished product must often be taken out in the cold, so that the oil does not have time to melt at room temperature.

Because of the large time costs, today few people will take to prepare a dough for a classic recipe, but there are test options that can be done quickly enough. Here is one of the recipes: take 250 grams of flour, sift it through a sieve and mix it with an incomplete teaspoon of salt. Flour pour into a large bowl and put in it 250 grams of butter, cut into pieces. The oil must be cold. We begin to "chop" the oil with flour, achieving the state of small grains. Then gradually we will pour into the flour with butter 8 tablespoons of very cold water. Put the batter into the refrigerator for half an hour. Then take it out, roll it out and fold it four times. Do this two more times. This dough is great for making puff pastry with meat.

Prepare a "quick" puff pastry and cottage cheese. The recipe of preparation practically does not differ from the above described. Flour (250gr), mix with the same amount of butter and cottage cheese (rubbed through a sieve). Flour should be mixed with half a teaspoon of baking powder. After aging in the cold, the dough is rolled and folded in layers, as in the first version.

You can cook another, even faster version of the test for puff pastries. To do this, knead the dough from 350 grams of flour, one egg, a tablespoon of vegetable oil and six tablespoons of water. Allow the dough to lie down, then roll it into a thin layer and lubricate well with a soft butter. At this amount of test you need to take a pack of butter (250 grams). Then twist the dough from a dough and cut it across into small pieces. Then roll out the lozenges and form puff pastry with meat or any other stuffing.

But to cook puff cakes with meat, it is not enough to make a dough, it is necessary to make also a stuffing. Here, too, options are possible. The filling can be prepared either from raw, or from boiled or stewed meat. In the first case, meat is passed through a meat grinder, and then forcemeat is fried in a frying pan with onions. Finished minced meat seasoned with salt and favorite seasonings. In the mince you can add greens, chopped eggs or boiled rice.

If it is decided to cook pies filled with boiled meat, then it must be crushed in a blender or in a meat grinder and seasoned. If the filling is rather dry, then it should be diluted with broth or white sauce. Similarly, you can make a filling of chicken and make puff pastry with chicken.

So, both the dough and the filling are ready, you can start making pies. To do this, roll out the dough, cut out the circles from it, lay out the filling on them and make pies. You can form puff cakes with meat and other ways. To do this, we spread the filling only half the dough pieces, then grease the edges with a yolk of egg, whipped with a little water, and cover the remaining mugs from the dough, tightly pressing the edges.

Bake puff cakes you need in the oven, the temperature of heating - 180 degrees, baking time - about 30 minutes. However, to learn that pies are ready will be easy on the tasty smell that will spread from the oven, and a ruddy crust.

Such patties can be served to the table warm or cold. This pastry can be served to broth, tea, milk or coffee.
