To prepare this delicious dish , special breed ducks are used, which are grown in the suburbs of Beijing. They quickly gain weight thanks to special feeding.

Initially, the duck is plucked, then the air is blown under the skin to completely separate the meat. Then rub the carcass with a mixture of oil, molasses and sauce. Peking duck in sleeve

For cooking, we need:

  • Soy sauce - 4-5 table spoons;
  • Duck - 1 carcass;
  • Honey - 1-2 table spoons;
  • Ginger - 1 teaspoon;
  • Miso-paste - 2 tablespoons;
  • Apples - a couple of pieces;
  • Pepper, spices, salt.

Initially, you should grate the duck with spices, salt and pepper. Now take the bamboo stick and pierce the carcass from all sides. Then put it in a baking bag and send it to the oven for 42 minutes. A bird is prepared at 195 degrees.

In the meantime, it is necessary to mix soy sauce with honey in the vessel so that the honey dissolves well. Add ginger and miso paste to the mixture. When the duck is ready, it must be carefully removed from the bag and put on a baking tray. Then grease the top with cooked sauce and place for another 19 minutes in the oven. After that, again get it, gently turn over to the other side, also grease the sauce and place for another 18 minutes to bake.

Then put the dirty carcass of the duck in a foil and wrap it carefully, pouring into a baking sheet of water. During cooking, turn the duck several times.

While the bird is preparing, it is necessary to clean apples without removing the skin. Then pour into the skillet a little fat, which was formed from the baking of a duck, and lay out the apples. Fry them for several minutes. Then take out the apples and crush them with a fork, then again put in a frying pan and add water from the baking tray, which was soaked with the aroma of baked duck. Thus, you should prepare apple sauce, which is formed during boiling.

Preparing a duck in Beijing in this way will take a little time from you, but the dish turns out to be amazing and fragrant, before it no one will stand.
