Ketchup "Sloboda" - natural and delicious

Ketchup is one of the most popular sauces. It is loved by both children and adults. To date, ketchup "Sloboda" is considered one of the highest quality in Russia, according to not only consumer surveys, but also the expertise of many state laboratories.

Production technology

First of all, it is necessary to prepare raw materials. The collection of tomatoes begins in late June and early July. The harvest is multi-level cleaned. First, tomatoes are sorted, as during transportation some of them can be damaged, then they are washed.

Next, the vegetables are sent under the press and pressed. The resulting mixture is stored in a clean stainless steel pan until it is placed in the rubbing machine, where the pulp is peeled and peeled. Only now is the raw material ready for ketchup.

Further it is checked and certified. Otherwise, neither the flesh nor the juice will be allowed to be produced. At this stage, all the necessary ingredients for the preparation of Sloboda ketchup - sugar, citric acid, salt, stabilizers, are dosed on the process scales. In the same way, before dispatch to the shop, the pulp is measured.

Now the process of preparation of the dry mix begins. In the water, sugar, stabilizer, citric acid and salt are mixed. Dissolution of dry ingredients is carried out in a container for prolonged pasteurization.

The next stage is a bookmark of tomato paste. The required amount is combined with the recycled dry mixture and water is added. The whole is then mixed to a homogeneous consistency. Now it is necessary to separately mix 10% solution of acetic acid, flavors and spices. The next step is the addition of a syrup to the sauce, which is made from sugar and sweeteners.

After all the ingredients have been added and mixed, the mixture goes through a cleaning step from the fibers and excess solid particles. Then comes the turn of pasteurization - heat treatment, which is performed at a temperature of more than 100 degrees. On this the sauce production is almost finished.

The last stage - bottling ketchup "Sloboda" in the tank at a temperature of 80 degrees. If the container is not suitable for hot liquids, the mixture is cooled to 35 degrees.

Among its ingredients is tomato paste, which is prepared only from selected tomatoes. As in the classic sauce, sugar, vinegar, salt, and fiber are added to the ketchup, due to which the product is enriched with fiber. Spices include pepper, cloves, celery, cinnamon and much more.

An independent jury evaluated the quality of sauces of several leading brands. It consisted of ordinary buyers who came to the store, where the tasting took place. During the competition, in order to exclude courting, all trademarks were classified.

The next step in the evaluation was the study of each sample in the laboratory. According to the results of the examination it was established that it was ketchup "Sloboda" that the tomato was made according to all the requirements of GOST. It was also determined that the product is made only from natural ingredients, without the addition of emulsifiers, dyes and starch.

Ketchup "Sloboda" is sharp. His taste will be remembered by the piquancy of jalapenos, tabasco and cayenne pepper. You can also smell the carnation in this spicy sauce. Of course, with heat treatment a large number of useful nutrients are destroyed, but antioxidants remain. They, in turn, contribute to the prevention of atherosclerosis and cardiovascular diseases.

As for the already open sauce, you should not abuse it. It is better to use it as quickly as possible. In addition, acute ketchup may adversely affect the health of people with diseases of the gastrointestinal tract. It is also undesirable to use it for pregnant and lactating mothers, since it contains various spices that can cause allergies. As for children of preschool age, this product is also contraindicated for it because of the content of various stabilizers and flavors in it.
