How to pickle mushrooms, and how to use them later

Who decided for the first time to marinate food is unknown, but this variant of procurement of products has become very popular. After such processing the food gets an unusual aroma and a rather piquant taste. So you can harvest vegetables, mushrooms, seafood and much more. Marinating mushrooms in our time is able almost any mistress, and each will have its own unique recipe. But among all their diversity, there are two options for marinating, which are fundamentally different from each other.

Option one. Fresh washed and cut mushrooms are cooked in a salt solution of a certain concentration with the addition of acid and spices. Then they, together with a saturated marinade, are laid out in sterile containers and sealed for long-term storage.

Option two. Mushrooms boil beforehand. Then rinse and drain. In another container separately prepare marinade. After that, the boiled products are spread over the cans and poured with a freshly prepared fragrant solution.

It is not difficult to notice the difference between the options. In the first case, the gifts of the forest are rolled in the same solution in which they are cooked. The marinade is prepared immediately, and the concentration of the components is calculated based on the amount of the product and the cooking time. In the second case, the mushrooms are boiled in a saline solution (two tablespoons per liter of water), and then poured with a broth of spices, prepared according to the chosen recipe.

Marinating mushrooms is not as difficult as it seems. First you need to understand that this procedure is subjected to both tubular and plate mushrooms. But it's better to treat each species separately. They are thoroughly washed, the legs are separated from the hats, and then cut into pieces of medium size. Small mushrooms can be marinated separately, but large ones must certainly be checked for worms. The preparation of the container is carried out in the same way as with any other method of preservation. Then the process begins.

In cooking today, hundreds of recipes for the preparation of mushrooms of various types and sizes are known. Each of them is worthy of attention and good in its own way. In recent years, the masters have become popular recipes of oriental masters. They attract an unusual set of spices and simplicity of cooking. Take, for example, a version of Korean cuisine. Marinating mushrooms in this way is a pleasure.

First you need to stock up on the necessary ingredients. One kilogram of any hard mushrooms (better than champignons) will need 100 grams of carrots, a quarter of a teaspoon of black pepper, 1 pod of Bulgarian sweet and red bitter pepper, a few cloves of garlic, 2 onions, a teaspoon of essence (acetic) or a pinch of citric acid, salt , 100 grams of vegetable oil and a couple tablespoons of sugar.

Preparation is as follows:

  1. First mushrooms boil for 6-7 minutes, and then rinse them under cold water.
  2. Pepper, carrots and onions grind in circles and fry in oil.
  3. Cool the vegetable mixture should be combined with mushrooms.
  4. Then add the remaining ingredients and mix thoroughly.
  5. We give the mixture a little insisting, and then we spread it over the cans and roll it up.

A jar of these delicious mushrooms will be a wonderful snack in case you are unexpectedly visited by guests.

But not everyone loves exotics, so often mistresses prefer pickling mushrooms in a simple, unpretentious way. For this option, you need the following ingredients: a kilogram of forest gifts, a third of a glass of water, two-thirds of a glass of vinegar, a tablespoon of salt, two laurel leaves, a teaspoon of sugar, a little ground cinnamon, five peppercorns, a pinch of citric acid and a pair of clove buds .

Cooking process:

  1. First you need to boil water in a saucepan, add salt and vinegar.
  2. In the boiling solution you need to lower the processed mushrooms and cook for 20-30 minutes (depending on the type of product). It is necessary to remove foam, otherwise the marinade will turn turbid.
  3. At the end of the time, add the remaining ingredients to the pan and cook until ready.
  4. Then another hot product is poured over cans and covered with lids.

This option allows you to get a product in the end, suitable later for cooking other, no less delicious dishes. Marinated mushrooms are stewed with meat, vegetables and poultry. Soup, pies, casseroles and wonderful cold snacks are prepared from them. Recipes of salads with pickled mushrooms are very diverse. Mistresses recently fell in love with a salad called "Forest Glade". It is quite laborious, but very tasty, and looks spectacularly on the festive table.

For this dish, you need pickled mushrooms (hats), boiled potatoes, green onions, hard-boiled eggs, pickled cucumbers, ham, grated cheese and mayonnaise. The number of products depends on taste preferences.

Preparing the dish is very simple:

  1. All components, except mushrooms, must be cut into cubes as small as possible.
  2. Mushrooms are laid on the bottom of a deep bowl of caps down.
  3. Next, all products are stacked in the following order: onions, potatoes, ham, cucumber, egg, cheese. All layers, except for the latter, are abundantly lubricated with mayonnaise.
  4. The salad is left for a short time on the table so that it is soaked, and then sent to the refrigerator for freezing.
  5. Before serving, the bowl is covered with a wide plate and turned abruptly. On the sides, the dish can be decorated with greenery. In this form it really looks like a clearing in the forest.

When you open a new can, you do not have to worry about what to make from pickled mushrooms. You just need to include imagination and start creating. The easiest way to put the contents on a plate and sprinkle onions. But this option is not too original. Some mistresses string small mushrooms on skewers and randomly spread on a plate.

Even ordinary fried potatoes change their taste, if you add pickled mushrooms to it. To do this, they are first ground and then fried with onions and carrots. Then separately fry potatoes and add to it mushrooms with vegetables. The taste is so extraordinary that it's hard to imagine.

Do not limit the flight of your imagination with familiar recipes. Marinated mushrooms are a product with which you can experiment endlessly.
