Goat can be simply drunk or processed. It produces an equally useful product - a magnificent goat cheese with a delicate taste, which is not difficult to prepare at home.

There are many recipes for cheese, both with the use of tablets for leaven, and without them.

Here is one of the recipes for making this delicious product.

In order to make goat cheese, you need goat milk, butter, eggs, salt and soda.

Two liters of goat's milk is left in a warm place and allowed to sour. To make the process go faster in it add a spoonful of sour cream and mix properly. With sour cream milk will be ready in two days.

As a result, you will get a milk clot and a large amount of serum to be drained. Separate the serum carefully so that it does not mix with the bulk. After that, the milk clot is placed in a dense tissue pouch and suspended for six hours over a container, where the remainders of the whey will flow.

Now the resulting dense sour milk should be placed on a slow fire, heated, cast in a colander with gauze, to form a liquid formed by heating, glass. Thus, it should be about half a kilogram of curd, which must be sustained during the day.

Then combine cottage cheese with half a liter of fresh milk, mix thoroughly and cook on low heat for several minutes. Throw in a colander with gauze and squeeze properly.

Then begins the preparation of the cheese. Butter, melt, put the resulting cottage cheese, three yolks, half a teaspoon of salt and soda. All this carefully mix and cook for 15 minutes on low heat, stirring constantly, so as not to form lumps. Goat cheese should be homogeneous and viscous.

While the cheese is liquid, it must be poured into a greased dish for shaping. Instead of oil, you can lay cellophane on the bottom of the dish. Put a bowl of cheese in the refrigerator.

From the proposed amount of products should be about 700 grams of finished cheese.

Another recipe is how to make homemade goat cheese.

For cooking, you need two liters of goat's milk, three eggs, 400 grams of sour cream, dried basil, dill and garlic, two st. Tablespoons of salt.

Milk heated on low heat with constant stirring. Sour cream, eggs and salt in a mixer until smooth. Combine the resulting mass with milk, put on fire and with constant stirring, heat strongly, but do not bring to a boil, and soak for several minutes.

In the sieve put the gauze folded twice, pour the prepared mass, put the dried spices and mix. The ends of the gauze tie and suspend in order to glass the liquid.

When the excess liquid drains, the product is placed directly in the gauze in a saucepan, covered with a plate, put down on top: a stone or jar with water. Put the pan in the refrigerator. After 15 hours cheese can be sampled.

How to make cheese from goat's milk using acidin-pepsin?

Many recipes for goat cheese include acid-pepsin, which can be bought at a pharmacy.

For the preparation of cheese you need 10 liters of goat milk, half a glass of curdled milk, 10 tablets of acid-pepsin, 30 grams of salt, cumin.

Milk warm to a temperature of 35 degrees and add yogurt. Pills of acid-pepsin dissolve in a half-glass of warm water, pour into milk, as it should be mixed. Cover the pan with the mixture with a warm cloth and soak for about an hour.

The resulting clot is cut into parts and mixed with a wooden spatula for about five minutes. Then let the clot settle, cover it with gauze, whey the serum over the gauze.

Mass salt, put cumin in it, mix for about five minutes. Then throw it into a colander with gauze. Cover the mass with the edges of the gauze, put oppression on it and leave it for two hours. Cheese from goat's milk is ready.
