Gambo soup - a dish for true gourmets

Gumbo soup is a traditional dish in the US state of Louisiana. In consistence, it resembles a vegetable stew. There are several variations of this soup. But the main ingredients invariably remain flour soup, meat or seafood and condiments.

Gumbo Classic Soup

Necessary ingredients:

  • 5 tbsp. L. Flour (the variety does not matter);
  • 2/3 of the stalk of celery;
  • A 200-gram piece of butter;
  • Garlic - enough for 5-6 denticles;
  • Chicken thigh - 3 pcs .;
  • One bundle of green onion;
  • Thin hunting sausages - 4 pcs .;
  • One Bulgarian pepper;
  • Average carrots;
  • 300 g of rice (long grain);
  • Two onions;
  • Hot pepper in dried form.

Practical part

  1. We spread everything on the table from which the gumbo soup will be prepared. The recipe assumes the use of chicken legs. We will start with them. Defreeze them, rinse with tap water.
  2. In the pot, put the whole leg and rice. Then we send the peeled carrots and the onion (whole), and a couple of leaves of the laurushka. Fill it all with water. Let our broth be cooked over medium heat.
  3. Celery, Bulgarian pepper and onions are washed. Now grind them into cubes. Garlic cloves and hot peppers can be simply chopped.
  4. In a separate saucepan pour the flour. Fry it using butter. Do not forget to stir it. In this saucepan we shift the crushed vegetables. Stew for 5-7 minutes. Be sure to stir.
  5. From chicken soup we take onions and carrots. They can be thrown in the trash can. Rice we send to a plate. And we shift the whole leg to the cutting board. We remove the bones. Cut the meat into medium pieces.
  6. Now put the hunting sausages on the cutting board . Cut them in circles.
  7. In a pan with vegetables pour in chicken broth. Solim. Sprinkle with your favorite spices. We put pieces of meat. We record 7 minutes. During this time the gumbo soup will reach the required condition.
  8. We serve the table. We place deep plates in which we pour a fragrant soup. That's not all. In each plate we put 1-2 st. L. Cooked rice and pour over gravy (from flour and butter). As a decoration, a chopped green onion.

Gumbo soup: recipe with shrimps

Grocery set:

  • 300 g of onion;
  • Laurel - 1 sheet;
  • For 1 tsp. Cayenne pepper and thyme;
  • 120 ml of refined oil;
  • 0,4 kg of tomatoes in own juice;
  • For ½ cup of flour and chopped parsley;
  • Garlic - 5 denticles;
  • Shrimps in purified form - 650 g;
  • One Bulgarian pepper (green) ;
  • Crab meat - 450 g;
  • 2.5 liters of chicken broth;
  • Fresh bacon - 250 g.

detailed instructions

Step number 1. What should I start with? Take the bacon, cut into thin slices. We heat the cast-iron frying pan. We put into it slices of bacon. Fry them without oil.

Fire should be minimal. Once the pieces have a brownish tinge, immediately turn them over to the other side. Then put it in a bowl and put it aside.

Step number 2. We will tackle the processing of vegetables. Peeled onion, Bulgarian pepper, cloves of garlic and celery, crushed into cubes. We open the jar with tomatoes. We merge the juice from them. And cut the tomatoes into quarters.

Step number 3. In the pan, in which the fat remained after roasting the bacon, we pour in the oil. Add the flour in the right amount. We mix these ingredients. Fry them until a brownish hue appears. Usually this process takes 20 minutes. Then we fall asleep in a frying pan crushed vegetables (except tomatoes) and 1/3 chopped onions. We extinguish all this for 15-20 minutes. Vegetables should soften.

Step 4. Pour the contents of the frying pan carefully into the pan. Pour in pre-cooked chicken broth. Sprinkle with cayenne pepper and thyme. We put one leaf of a laurel and quarters of tomatoes. Solim. Gumbo soup will be cooked for another 40 minutes.

Step number 5 . Add chopped parsley, the rest of the onion and shrimp. Stew the dish for another 5 minutes.

Step number 6 . We put in a pan slices of bacon and crab meat. Solim. Extinguish a couple of minutes. Turn off the fire. We extract the laurushka from the soup. Close the lid. Let the dish feed a little. Then we distribute it on deep plates.

Another recipe (with mushrooms)

Ingredients:

  • 200 g sausages and smoked chicken fillet;
  • Garlic - 3-4 cloves;
  • Medium bulb;
  • For ½ cup of refined butter and wheat flour;
  • One Bulgarian pepper;
  • Ordinary water - 5-7 glasses;
  • 150 grams of boiled shrimp (without shells);
  • Tomatoes - 5 pcs .;
  • Parsley - 1 bunch;
  • 100 g of champignons;
  • Chopped okra (vegetable) - 1 glass;
  • One runaway celery.

For seasoning:

  • For ½ tsp. Thyme and onion powder;
  • Pepper cayenne - enough for 1 tsp;
  • Salt - no more than 1 g;
  • For ½ tsp. Black and green pepper, as well as ¼ tsp. - white.

Cooking process

  1. We lay out the right products before us. First of all, you need to make seasoning. To do this, mix all the components mentioned above. For those who do not tolerate spicy food, we recommend that you give up cayenne pepper in a dish.
  2. Pour flour into a deep frying pan. Fry, using oil. Once the flour has acquired a golden hue, you can turn off the fire.
  3. Sausages are cut into circles. Mix them with the previously seasoned.
  4. Washed and peeled vegetables, as well as mushrooms are crushed (preferably cubes). Tomatoes can be cut into 2-4 parts. Shredded vegetables are combined with sausages and seasoning. We pour in water. Add the okra, chopped garlic cloves and shrimp meat. We also pour chopped greens. We put the fire on the average. The time of extinguishing the dish is 30-40 minutes.
  5. Gambo soup with mushrooms is served hot. Boiled rice or potatoes can serve as a side dish for this dish. The choice is yours.
